I love this dish, I first had it in Paris, at a bistro near the Hotel de Ville called Le Trumilou, about 27 years ago. They served it with perfect frites.

really reminiscent of coq au vin, I found it somewhat laborsome to make the coq au vin and you don't get a crispy skin at the end of course, after you've initially pan-fried the bird skin-down.
