⬇️⬇️English recipe follows⬇️⬇️ 鹵水鴨舌 材料: 急凍鴨舌1磅 鹵水汁1支 處理: 1. 大火煲滾1鑊水,加入粗鹽半湯匙,及紹興酒20毫升。 2. 放鴨舌落鑊,大火滾起,倒去水分,清水沖洗乾淨,擎乾水。 烹調: 1. 大火在煲內煲滾鹵水汁,同時加入相同份量的清水,大火滾起。 2. 轉慢火,試一試味,加入老抽1茶匙,以增加顏色。 3. 轉大火,放鴨舌落煲,大火滾起,熄火,冚蓋,焗10分鐘。 4. 擎乾鹵水汁,攤凍。 5. 鴨舌,攤凍,排好在碟上。 6. 完成,可享用。 • 重用的鹵水汁,要加入: a. 片糖1塊 b. 花椒、八角、香葉、桂皮及茴香各少許 c. 生抽、老抽,各少許 Ducks' tongues in Chinese marinade: Ingredientss Frozen ducks' tongues 1 lb Chinese marinade 1 bottle Preparation: 1. Heat up a wok of water at high flame. Add in 0.5 tbsp of cooking salt and 20ml of Shaoxing wine. 2. Put ducks' tongues in wok. Heat up at high flame. Pour away water. Rinse thoroughly. Drain. Steps: 1. Heat up the marinade at high flame in pot. Add in same amount of water. Heat up at high flame. 2. Turn to low flame, check the taste. Add in 1 tsp of dark soya sauce to make the colour deep. 3. Turn to high flame, put ducks' tongues in the pot. Heat up at high flame. Turn off fire. Cover up the pot. Leave it for 10 minutes. 4. Drain the marinade. Wait for cooling down. 5. Wsit for cooling down of the ducks' tongues, put in rows on plate. 6. Complete. Serve. • if you are going to reuse the marinade which is in refrigerator, you need to add in: a. Slab sugar 1 pc b. Sichuan peppercorn, star anise, bay leave, cinnamon and fennel c. Little amount of light and dark soya sauce
