潮州鹵水鴨
材料:
急凍鴨1隻
鹵水汁2支
蒜蓉檸檬糖醋汁材料:
檸檬1個
辣椒仔2隻
蒜頭3粒
處理/程序:
1. 大火,煲滾1煲水,加入鹽2湯匙及酒2湯匙,放鴨出水,去除雪味、腥味及加入少許鹹味,大火滾起2分鐘,倒去滾水,清水浸凍,倒去水分,清洗2次,除去羶味,擎乾水。
2. 鹵水汁,倒入煲內,加入清水,鹵水及清水的比例,是1比4,大火煲滾。
3. 花椒1湯匙、黑椒1湯匙及冰糖1大粒,清水洗乾淨,放入鹵水汁內,再加入老抽半湯匙,以加深顏色。
4. 鹵水汁已煲滾,放鴨入煲內,熄火,冚蓋,浸6小時。
5. 鴨已浸了6小時,反轉,冚蓋再浸6小時以上。
6. 鴨已浸了1晚,取出放玻璃盤內。
7. 大火煲滾鹵水汁,放鴨入煲,轉最慢火,冚蓋浸1小時。
8. 半小時後,反轉鴨,冚蓋,繼續浸餘下的30分鐘。
9. 鴨已浸了大約50分鐘,取出及倒乾淨體內的鹵水汁,攤凍。
10. 預備蒜蓉檸檬糖醋汁:
a. 蒜頭,去皮,切碎,放碗內。
b. 辣椒仔,去椗,去籽,切碎,放碗內
c. 拍鬆檸檬,揸檸檬汁在碗內。
d. 加入:
(i) 白醋6湯匙
(ii) 糖1湯匙
攪勻。
11. 放砧板及菜刀在煤氣爐上高溫清毒。
12. 鴨,切件,鹵水汁,淋上面。
13. 放上蔥絲。
14. 完成,可享用。
Marinated duck in Chiu Chow style
Ingredients:
Frozen duck 1 No.
Chinese marinade 2 bottles
Ingredients of
Sweet and sour sauce with garlics and lemon:
Lemon 1 No.
Chili 2 Nos.
Garlics 3 Nos.
Preparation/Steps:
1. Heat up a wok of water at high flame. Add in 2 tbsp of salt and 2 tbsp of wine. Put the duck in water to remove unpleasant smells and tastes, and add some salty tastes to it. Heat it up for 2 minutes. Soak in tap water to cool down. Pour away water. Rinse twice to remove unpleasant smells and tastes. Drain.
2. The Chinese marinade, pour into pot. Add in water. The ratio of the marinade and water is 1:4. Heat up at high flame.
3. Get 1 tbsp of Sichuan peppercorn, 1 tbsp of black pepper and a big cube of rock sugar. Rinse with tap water. Put into the marinade. Add in 0.5 tbsp of dark soya sauce to deepen the colour of the sauce.
4. The marinade has been boiled up, put the duck in it. Turn off fire. Cover up the pot. Leave it for 6 hours. Flip it over afterwards.
5. The duck has been soaked for 6 hours, flip it over. Cover up the pot again and soak it for 6 hours or more.
6. Duck has been soaked overnight, take it out and put it in a glass ware.
7. Heat up the marinade at high flame in pot. Put the duck in it. Turn to low flame. Cover up the pot and soak for an hour.
8. Flip over the duck half an hour later. Cover up the pot and continue to soak for the rest of 30 minutes.
9. The duck has been soaked for about 50 minutes, take it out and drain the marinade from its body. Wait for cooling down.
10. Prepare the sweet and sour marinade with garlics and lemon:
a. The garlics, get them peeled. Chop well. Put in a bowl.
b. The chili, remove the anchor. Remove seeds. Chop well. Put in a bowl.
c. Lemon, beat well. Squeeze the juice in a bowl.
d. Add in:
(i) white vinegar 6 tbsp
(ii) sugar 1 tbsp
Mix well.
11. Put chopping board and chopper on gas cooker for the purpose of high temperature infection.
12. The duck, cut in pieces. The marinade, is to be pouted over it.
13. Put shredded green onion on top.
14. Complete. Serve.
