megan rosalez yes any vegetable can be used like grated carrots or any greens as well

What can you substitute for bottle gourd if you can't find that vegetable. What sauce do you recommend?

You can always use zucchini and or carrot or even another type of squash. A cilantro chutney can be served with this.
