I believe the demon lord's hate for Genji stems from knowing the Shimada story. Genji had every reason to hate Hanzo and exact revenge but he chose the path of forgiveness. What irritates Mephisto is knowing how easy it could have been to corrupt Genji into a minion but it didn't happen
