Maimoona Yasmeen Recipes - is famous all over the world. It is cooked in two ways. Kachhi Aqni (Marinated raw mutton) and (Cooked Mutton). This is a recipe with marinated raw mutton ie Kachhi Aqni.

Ingredients:(For 4 servings)
Mutton (Big Pieces) - ½ Kg
Rice - 750 grams
Curd - 2 Cups
Ginger Garlic Paste - 1 ½ Teaspoon
Chopped Onions - 4
Red Chilli Powder - 2 Teaspoons
Turmeric Powder - 1 Teaspoon
Salt - 4 ½ Teaspoons
Mint Leaves - 1 ½ Bunch
Chopped Coriander - 1 ½ Bunch
Whole Green Chillies - 2 to 3
Grinded Green Chillies (Paste) - 4
Spices - 1 Teaspoon
Caraway Seeds (Shahzeera) - 1 ½ Teaspoon
Cinnamon (small sticks) - 2 to 4
Cardamom slit - 2
Cloves - 2
Ghee - 1 Tablespoon
Oil for Frying
Procedure:
1.In a frying pan, add oil for frying and when it is hot, add chopped onions, fry till they turn brown or turn crispy. Keep it aside.
2.In a cooking saucepan, add mutton, curd, ginger garlic paste, red chilli powder, turmeric powder, 1 ½ teaspoon of salt, ½ bunch mint leaves, ½ bunch chopped coriander, 4 grinded green chillies, 1 ½ teaspoon of salt, spices, one squeezed lemon juice, half of the fried onions, 1 tablespoon of mashed or grinded raw papaya. Marinate the mutton and keep it aside for half an hour.
3.In a separate pan, add 10 glasses of water. Add cardamom, cinnamon, cloves, handful of mint leaves, handful of chopped coriander, 3 whole green chillies, ½ teaspoon of caraway seeds and 3 teaspoons of salt.
4.When the water comes to boil, add washed rice. Semi cook the rice and drain the water.
5.To the marinated mutton, add semi cooked rice spread in a layer.
6.Add milk mixed with 4-5 sticks of saffron and a pinch of orange colour(called as sweet colour)
7.Add handful of fried onions, handful of mint leaves, handful of chopped coriander, ½ teaspoon caraway seeds and ghee.

juhi firdos Wskm, Ramadan Mubarak to you too Ms Juhi. Thanks for following our recipes. If Biryani is served along with other dishes, you can go for 2.5 kg rice and 4 to 5 kg mutton but if it is served alone with Dahi ka raita or curry, opt for 3 kg rice and 5 to 6 kg mutton. Some people use mutton double the quantity of rice, you can add mutton according to your requirement. And of course, we will look forward to your request ie dry prawns recipe. Please be connected.

Mutton take more time to cook & u used raw mutton not the half cooked or cooked one, and u added half cooked rice on the top of mutton and the finished dish came perfect cooked , actually the half cooked rice takes very less time than mutton , i think this is the special of hyderabadi dum biryani.

I don't understand how mutton will get cooked in only 5 mins on medium plus 10 mins of simmering?!!!! Trying to understand. Love the rest of recipe

Rahul Malhotra Thanks Mr. Rahul for liking our recipe. This recipe was done keeping in mind the people who say that they have stoves with very high flames and to prevent burning I mentioned less time. But rest of my recipes are done according to a standard level of flame. That's the reason I started mentioning the output too for my other recipes, like when the steam develops or when the rice gets cooked well, etc.

Spices or Garam masala powder that we used here for this recipe is the grinded powder of cinnamon, cardamom, cloves and caraway seeds. Cinnamon 10 grams(2 tablespoons), Cardamom 15 grams(2 tablespoons), Caraway seeds or Shahzeera 10 grams (2 tablespoons) and Cloves 8 in quantity. Use the required quantity and store the remaining powder for next use.

munawar sultana Even ginger garlic paste can tenderize the mutton if kept for 4 to 5 hours. But in some cases mutton does not get tenderized easily. Therefore, you can go for mutton tenderizers available at grocery shops if raw papaya is not available.

This recipe and ingredients serve only 4 to 5 persons ( small quantity) and I even learnt from people abroad that they have stoves with very high flames and cooking is done in no time. Therefore I kept in mind these two factors for this recipe. If you are using the same ingredients as shown here, you can cook on medium flame for 5 minutes and then simmer for 10 minutes but if you are preparing in large quantity, cooking time will surely increase. Therefore, cook on medium flame till you can see the steam developing and then simmer.

Qudsia Rizwan For Kachhi Aqni(Raw Marinated Mutton) Recipe, you need not cook the mutton. If papaya is not available, leave the mutton for marination for 3-4 hours or you can go for Pakki Aqni(Cooked Mutton) Recipe which I'll be uploading soon.

Mohammed Shah The aroma in Biryani depends upon the spices, Basmati rice and pure ghee. The quality of rice and ghee should be good. When we fix the lid firmly and cook on low flame, the steam develops and spreads the aroma which is usually not smelled near the cooking range.

Bhai aap ki recipe sahi hain LEKIN...five minutes high heat and 10 minutes simmer and biryani is done?? Voh bhi kachche gosht ki? Are you SURE bro its not 40 minutes of simmer?

Hello, It depends upon individual preference. You can add mutton as per your requirement, some people add mutton, double the quantity of rice.

I don't think the raw mutton would cook in just 10 minutes especially as your pan lid had a steam vent!Please get a proper English speaker to do the audio as your English is not very good &your pseudo accent changes in every sentence
