I know someone else mentioned the flash freezing so I thought I'd add a bit to that. Basically, when you freeze food conventionally, the water in the food will form large crystals that rupture the cell walls of the food, changing its flavor. With flash freezing, the water doesn't have time to freeze into larger crystals, and instead freezes as much smaller bits of ice that do little damage to the cellular structure. This makes flash frozen food taste fresher.

I would also add that the slow freezing can make certain foods taste better than if they are fresh. Broccoli comes immediately to mind, especially if you are frying it...if you freeze it first it makes more of the broccoli flavor contribute to the other items in something like a stir-fry. It also allows you to cook it less time to still get both firmness and softness simultaneously (always a tough balance in broccoli). The breaking down that comes from freezing is also really good for veggies and fruits that you are making a smoothie out of anyway as it leads to a smoother consistency in the end (and less blend time)...this seems especially true for cherries, kale, spinach, and beets.

Durian has a very high rate of heterozygosity which means even planting a seed with two parents of the same species and variety can yield a tree of a new variety thus hybridizing two different species does some really crazy stuff to the genetics of the offspring

Neither avocados nor apples grow "true to seed", if you plant seeds you're unlikely to get a good tasting fruit out of them, but if you do, you can patent it and sell the cuttings and make a pretty penny. Of course it'll be years between planting and having the tree grow fruit that tells you if you got a good one, so it's definitely not a get rich quick scenario.

Most Fruits in the Supermarket have an extremely high level of Heterozygous Pathology. Only Annuals are relatively capable of reproducing fruit profiles generation upon generation...why? Because humans heavily influenced their natural traits, exaggerated desirables, & weeded out undesirable ones over many successive generations...and because they're annuals, it's easier to get results from you efforts to determine your success.

But for a quick fix my best guess right now is something from Tchaikovsky. Edit: yeah i can barely hear the audio so it'd be a bit more of a chore than I want to take on for now. You'll have to settle on the quickfix i motioned towards. I need new headphones these turtles are almost 14 years old they do the bare minimum. That and i don't have a very long frame of reference the audio skips around through several musical composures. Hopefully- even if i am completely incorrect, my recommendation gives you a sliver of your request.

Just FYI: Otak Udang Galah = Lobster Brain - it's referring to the color of the fruit meat. Another FYI: Prawn brain/Lobster brain is consider a delicacy and material for a local favorite sauce (prawn sauce), a very potent, very strong taste sauce.

Hi, a Borneon here. We have so many varieties of durian. Some have never been cultivated by humans. The tiny wild durians with purple or lipstick red colors don’t even have a regular “durian taste”.

I think that the reason I love your channel so much is because I live in one of the most strict produce quarantine zones in the world! If not THE most strict. There's no way I could even mail order any of these amazing fruits in; we have sniffer dogs at every entry point to the island! Down here you're pretty much screwed if you don't like apples, and even then if you buy from them from a supermarket they are a year old. 😞

@@WeirdExplorer Tasmania, Australia. If you ever come down here, you would need to do some bush foraging for wild berries to find anything exotic. We grow truffles and saffron, and excellent wine grapes, lots of cultivated berries, but natives like pepper berries are seasonal and not readily available locally. You might even be stopped and searched at the airport on if you even smell like fruit. 😯 Agriculture is fiercely protected and here. Thanks for sharing your discoveries on KZbin!

the durio graveolens i've had in borneo was more like the second variety here than the red one you've tried before (mine was also more orange in colour and not bright red). the texture was exactly like peanut butter and the taste like extra-intense peanut butter with a roasty flavour.

I have tried it two or three times from local markets. You can usually find it in an Asian market. I think the first one I tried may have been rotten. The shell had cracked open. Hybrids have different flavors compared with common ones. Two durian I tried on different occasions tasted somewhat like vomit and custard with a bit of rotten egg yolk. The second time was much better because it was pre-cut and Frozen at an Asian market not a whole fruit. It still had an almost mustard quality with some sulfurous aftertaste but was much more like fruit. If you can find a Philippine Market they may have it frozen in a little package.

Essentially they're frozen faster than the ice crystals can properly form, thus maintaining the cell wall integrity... essentially it's the same way Obsidian & Granite can have many of the same compounds, but in Granite the materials cooled slower than it did in obsidian. The end result is that the crystal structure is more defined in granite, & obsidian is a glass because the compounds couldn't essentially separate out, and form independent crystals.

Fast freezing prevents big ice crystals from forming, which rupture the cell walls with their sharp edges. Smaller ice crystals do far less damage to the micro structures of the product. Imagine rubbing glass dust in your hands instead glass shards.

I brought a durian before the lock down and froze the parts i didnt eat. They have kept their texture... i did want to seeds but they where non existent! (Also try durian with some canary island palm honey!)

Actually, the prices doesn't seem that bad. I've notied that sometime people unflavor fruit, and vegetables. Onions sweet as apples, they claim. Bell peppers. Luckly, people are breeding for heat, and favor in peppers, but not so much in onions. My sister bought a house, that was a farm. When she moved in, all these people called her. They wanted to know if she grew the old fashion onions. Everyone was dissappointed, no one was growing them. Especially the restaurants.
