The reason we all love sans and want to see him snap is because we love the archetype of the “sleeping bear” so relatable. Sleeping bear archetype (inspired by old man Henderson): the bear sleeps and usually doesn’t move, when you poke it usually ignores you. Poke it too much and it might roll over to crush you, however if you decide to wake the bear, you deserve the punishment of waking said bear Sans pessimism and nihilism makes him into this character who believes change can never truly happen, so his brother is the ONLY thing that gave him light in these dark times.

Also considering og dusttale idea is about rivalry between Sans and human, where Sans specifically steals LV by farming monsters to achieve victory. Can't tell much about this Dusttale comic tho, kinda complicated, but it fits better to the au idea than UT Dusttale. I've missed the moment why and how Alphys starts genocide and gets to remember after resets, while the story's main focus is on Sans who straight up doesn't give a damn about human.
