In India we have many adivasis (indigenous tribes) who cook dried snails and make food/daal out of it. I'd visited my Santhal side of family in far rural areas of Jharkhand, they gave me to try "Rokoi" i.e. small dried snails (shells not included), made into a daal-like dish. Believe me it was one of the tastiest things I'd ever eaten. You couldn't tell that the soup/daal-like thing had snails, because texture is rubbery, colour is deep green and shape is like miniature vertically crushed cans. Snails are available in rainy seasons and in rural areas, so folks catch, dry and sell them during that season. They're sold in rural markets "Hatia"s. I think they keep good for more than 1 year. When need for special occasion arises, only a few spoons of Rokoi a very good meal.

I tried escargot at a café in Paris a few blocks away from the Eiffel Tower. Enough butter, garlic, white wine, and herbs and anything will be delicious, but the snails do have their own delicate and pleasant flavor that still comes through. Kind of like a milder mussel with a little bit of mild mushroom. Nothing strong, but without being bland either. The texture was good as well. I can definitely see why they’re popular in France, and kinda wonder why they never really took off elsewhere in the West.

I see shells of Roman Snails (L'Escargot de Bourgogne, Helix pomatia) and Turkish Snails (Helix lucorum) packed in the plastic cylinders with the canned snails, not the shells of marine snails. The snails in the can are sometimes not the same species as those that provided the shells. Italian-American fishmarkets in the US once routinely sold live Speckled Garden Snails (Cornu aspersum), Milk Snails (Otala lactea), Green Garden Snails (Cantareus apertus, usually packed in sawdust to protect their fragile shells, and the most esteemed and expensive), and the above two Helix spp., along with marine snails such as whelks and conchs. This trade in ground (land) snails was curtailed by the US department of Agriculture during the early 1960s, and ended in the beginning of the 1990s.
