Why would you cut it on a sheet pan??? Ruin your knife and pan plus possible fragments in your skirt. Doesn’t take any longer to use a cutting board.

it was a single slice… she probably didn’t realize it wasn’t going to fit on the pan and didn’t want to have to wash raw meat off of another kitchen item. plus she was cooking with a toddler, so she needed the sheet pan to catch all the soy sauce/seasoning. makes more sense to use a sheet pan and risk having to make a single cut than to use a cutting board that makes a mess just in case you have to cut
