I did this today when adding the spices to the oil when it was too hot. I realized I burned the spices almost immediately. I poured it out and started again. The second time I heated the oil over lower heat and mixed all the spices in a small bowl to be added at one time and removed the pan from the heat to stir. It turned out great.

I worked for two Greek brothers about 50 years ago. They brought the chili recipe to Cincinnati and opened a restaurant. Now it's bought out and franchised and mostly sold under two brands. Gold Star chili or skyline chili. I prefer the gold Star. My son prefers the skyline chili. You can but it frozen or in cans or you can find Cincinnati chili mix packets or skyline chili spice packets or goldstar chili spice packets. I will try your recipe but if you ever passed through Cincinnati you would find chili restaurants everywhere serving the chili with options of mustard, onion, over spaghetti and topped with onions, beans if you choose and piles of sharp cheddar cheese, Frank's hot sauce.. Have you tried your sauce on spaghetti with onions and cheese over it? It's so good!

@@paulthanasse7405 when I had to thin it a bit so it stays soupy I added 1/2 TBSP chili powder 1/2 tsp gran garlic and 1/4 tsp curry. If your sauce seems a tad bland try this

Like a lot of people out there, I grew up in the sixties and seventies, there was a hot dog shop in Butler Pa. that had the best chili dogs ever! I always wanted to make that chili sauce, this might be it, I never used curry powder before, I am definitely going to try your recipe! Thanks!

I've been on a quest myself for many years trying to find this recipe, and you hit the nail on the head. The town I live in has a Coney Island restaurant that started in 1921 by Greek folks, and their recipe has been kept a secret, but I believe this one is very, very similar but better than theirs. I did what you said and tried it just like you made it before I began tweeking it to my liking. The only change I made was to leave out the oil, grease, and / or fat of some kind to bloom the spices because I believe they bloom in the hamburger fat while cooking, and I added salt just like you did. Pure perfection Mr. Johns. I can't thank you enough. My quest is ended.😊

I thought about that also Mr. Johns and I ended up settling on 73/27 ground beef for this recipe because it has more tallow and I think its just right. Definitely dont want to use lean burger for this recipe because like you say the greek gentleman told you, its the oil/grease that brings the flavor to the tongue but you dont want it too greasy either.

@@TJGerk you eat such a small portion of it and only occasionally so I wasn’t too concerned there’s one recipe online somewhere uses CUPS of LARD. I do fine grind my hamburger sometimes. I’m going to post a Midwest Tastee Sandwich recipe/technique one of these days. Not a maid rite not a sloppy Joe it’s a local seasoned ground meat sandwich a family still sells here in Iowa, an unusual taste. Fine ground hamburger with salt pepper mustard ketchup ground onion horseradish n other ingreds started in Lincoln Nebraska

@@stevetalin6489 I was given ingredient not exact measurements. If you feel its a bit bland add 1/2 tbsp chili powder 1/2 tsp gran garlic and 1/4 tsp curry. It’s not a chili dog. It’s a soupy meat sauce just use 1-2 tbsp on your dog

Larry, I tried your recipe this past weekend. It was really good. The only change I made was omitting the salt, but using low-sodium chicken broth instead of water. My wife enjoyed it too. She said it didn't give her heartburn like my normal recipe which has cayenne pepper and Texas Pete hot sauce. Thanks.

@@scottsims3456 be careful when adding the flour. It clumps easily. Make a thinner paste and add hot juice from the chili to it first. You can use masa harina if you want. I’ve used half flour n half masa too. Hope you can find suet

@@jamesk8131 2-4 tbsp. I’ve used bacon grease and used suet. Butter. Veg oil. You’re just putting a couple tsp on a dog so Ya. Don’t worry. Just a few seconds in oil low heat. A while back I burned the slices simmering too long. Ruined it. Learned a lesson.

Add some mustard. It'll emulsify the oil and water and keep them from separating. Mustard goes really well on coney dogs, which is why this method works so well! 🌭🌭🌭🌭

@@jeffreyjohn4307 I’ve seen 15 ingredient or more recipes. Including ground hot dogs tons of lard etc etc. in my opinion when you get past a FEW ingredients you cannot possibly taste them all. I guess maybe if you’re a food expert I dunno. This is simply the recipe I was given by a Greek. When I made it. It turned out to be pretty much the flavor I was looking for in a Greek diner coney island as I remember them. The other things are important too. Thin line mustard fresh finely diced onion etc Use a good dog. Beef.

Then there’s just the fact that we all have different tastes. This is just my favorite and often some great tastes are simpler than we thought. I don’t think it tastes perfect by itself but when on your dog with the mustard and onion it just does it for me. YOU CAN FINELY GRIND YOUR HAMBURGER IT HELPS

@@nobaloneymahoney7940 don’t worry about blooming spices. Just start your hamburger in 1 cup water use masher or back of spoon to break up meat fine. Add spices and simmer. Don’t let it get too thick. If you feel it needs more flavor increase spices by 1/2. ie add 1/2 tbsp chili powder more etc I used beef tallow or lard for oil. Veg oil works too or butter. I use a couple tsp or even tbsp to dog don’t forget line of mustard. I hope you try it per recipe first time then do your own thing later if you must.

@@s.williamshay6702 one good thing about the sauce it tends to make even a cheaper dog taste pretty good. I like to use beef dogs but to be honest I never go the natural casing high priced I save them for dogs by themselves

@@fantasyguru26 I’d just put the hamburger in 1 cup water let it sit a bit. Then bring to boil as you use potato masher or back of big spoon to break it up finely. Then bring add like 4 TBSP some type of oil. Veg butter I used beef tallow. Lard just so there’s oil. Don’t worry about fat hell you don’t use much per serving n don’t eat coney islands every day. Then add your spices and simmer gently 20 mins or so. Don’t let it get thick or chunky it’s NOT a chili dog. Add water if needed to thin sauce. Let me know if you like it. Be prepared your kitchen will smell like a Greek Hot Dog Shop

I feel like if you dice an onion real good and put it in there first, cook for a cpl min then follow your recipe. Onion always makes chili better. Never have too many onions in chili. Imma try it with the onion

I used beef tallow for the oil in it.What I wanted to say is that since I had diluted it a bit with the water j added half TBSP chili powder 1/2 Tsp granulated garlic and 1/4 tso curry powder. I think it made it better. When given the ingredients I wasn’t told the measurements. This proportion seemed to taste the best. Sometime I’ll try increasing spice by half in the beginning n see.
