I cant find this anywhere, how do you change the system type? i.e Supply Air, Fresh Air Intake, Exhaust Air, or ELV, LV, FA Cable Basket etc

Depending on what type of family you choose, the contextual ribbon will allow you to make the system such as hot or cold or sanitary system...

You can use any fabrication configuration file. Revit comes with some default ones. You typically want to get the configuration file that works for your design jurisdiction
