Rachel, I've been watching your videos for a long time now and just realized I never left a comment thanking you for them. You put so much love and hard work in creating these videos, please know what a positive impact they have on the people who watch them. You never get to see us, but we're here, sitting behind a screen on the other side of the world, appreciating you. I think what makes them so special is your authenticity. You put an emphasis on the beauty in life but you never try to hide that it has its messy sides as well. No matter what mood I'm in, watching your videos always puts a smile on my face. This is so powerful. Thank you for inspiring me.

I came up with this recipe for watermelons specifically and every person that’s ever tried loves it just wanted to pass it along in case you get a lot of watermelons again. But I make a pesto to dip the watermelon slices in. Sounds weird but it’s delicious. I just pick good a few handfuls of fresh basil, and add that to a food processor with 1 to 2 cloves of garlic depending on how big they are, a wedge of Parmesan cheese, sea salt, about a cup of Walnuts, And some cracked pepper. The basil goes in after you processed the cheese walnuts and seasoning, at the end you Pour In olive oil until it forms a paste/dip consistency. And that’s it are usually top it off with cracked pepper and it is delicious!

I make apple butter every year - for future if you have an immersion blender you honestly don’t even need to peel. I make apple butter bread - any banana bread recipe but sub apple butter or in oatmeal is also delightful! I’ve also layered it in cinnamon rolls which was great.

I grew up in the south and in the area I grew up in, a lot of people canned, including my mom and mamaw. This summer, I started dipping my toe into it and I want to do more of it over time. I’ve done diced tomatoes and peaches. Not sure how they taste, but, the canning process turned out well. I hope canning goes well for you!

So for now, I bring what I can grow to the apartment where me and my kids live. How do y'all deal with the bugs? Been finding myself clearing out spiderwebs off of my plants, haha 😄.

Tomatoes can be frozen whole...just like that. If one is overripe just pop it in freezer without any processing. Then when ready to process place frozen tomato in boiling water and quickly pop it out. Slip off the thin skin. Put the still frozen tomato in a blender or crush. Process. I put it in the blender and put in soups and sauces.

I’m really interested in the preserved vegetables, and more specifically in the result! If you use canned vegetables, can you just prepare them like you would prepare fresh vegetables or is there a difference in recipes?
@racheltalbott
@racheltalbott 3 жыл бұрын
Like I mentioned in the video, there is a very specific protocol when it comes to long term preservation. I highly recommend getting The Ball Canning Book on Preserving. It's the standard protocol for proper preservation. In terms of the use, you can use them similarly to how you would use them fresh, but also you can create marinara, jams, sauces etc.

We can't have everthing in life...like a "proper" fall, but you are lucky to have all your harvest flourish. I cannot plant much here, due to weather changes. This year all crops are a month behind. The poor Bees are behind in their honey production. Weather in CA is better to grow food, unlike other places
