Hey everyone! For today's video we're cleaning up the garden + cooking up a lovely supper for the whole fam. I hope you enjoy!
I’ve recently rediscovered my love for baking. 👩🍳
Fun fact: I met my husband @byrontalbott when I was in high school, and decided to take culinary classes at the local college. I was in baking 102 when we met. ☺️
Recipe-
3 1/4 cup unbleached, all-purpose flour
2 1/2 tsp dry active yeast
1 1/4 tsp kosher salt
3/4 cup room temperature water
1/4 cup extra virgin olive oil
1/4 cup honey
2 whole eggs + 2 egg yolk
To a mixer with a hook attachment, add the dry ingredients: AP flour & kosher salt.
In a separate container, add honey to the room temperature water. Stir well. Add the yeast and cover for 15-20 minutes. This gives the yeast time to feed off the honey and activate.
Slowly add liquid until fully combined. Add olive oil and eggs to mixer and turn the mixer on medium to high. The dough should pull away from the bowl, feel sticky, and climb up the hook as it’s mixing.
Remove the dough (it should feel fairly sticky).. on a floured surface, gently roll doll into a ball and place in an oiled bowl. Cover and let rise till it’s doubled in size.
About 1 hour.
After it’s doubled in size, divide dough into three. Roll each piece and begin braiding. Cover and let rise for another hour. It should double in size. Once it’s doubled in size, take one egg yolk + teaspoon water, mix, and brush onto the top of the braided dough.
Preheat oven to 375 degrees and cook until golden brown. 🙏🏻
Tip: depending on where you live (humidity etc) you can always adjust the liquid so that your dough looks sticky and not dry. 👍🏻
For the braised chicken. I made enough for 6 people, so gauge ingredients accordingly. In a large pan, add olive oil and get the pan very hot. Add chicken and brown both sides till golden and crispy (it won't be fully cooked at this point internally.) Add salt + pepper. I added approx 3 tablespoons of tomato paste, sliced white onion, and let all of that cook together and caramelize (about 5-8 minutes). Add pomegranate vinegar, hefty splash of red wine, 1-2 tablespoons of honey + water to cover the chicken.
Use a pan that can be transferred to the oven, and let the chicken braise in the oven or on the stove for 1-2 hours. The chicken should pull off the bone easily. I made this dish with creamy mashed potatoes, side salad & challah.
