Deep fried mashed potato balls from 1822 and a slow roasted duck from 1823. These are real recipes (or receipts as they used to be called) from those who came before us. Let's recreate these dishes as they were made 200 years ago!

I grew up in a Hungarian household and my grandma made a similar version of the 200 year old receipt for fried mashed potato balls using leftover mashed potatoes. Her version was "potato cakes". Instead of breading the outside, everything was mixed together and fried in a skillet. She mostly just used onion, salt & pepper and parsley for her version as far as seasoning, omitting the rosemary, thyme and nutmeg. And of course we had duck or goose depending on what my great-uncle was able to successfully hunt.

Forgive me for asking but do you have any running water nearby-I guess what I’m asking is how do you wash your hands? Between the raw meat and eggs and just the mess of mixing butter with your hands or the potatoes, I keep wondering! Thanks.

I love watching your videos.. it reminds me of when I was younger and our family lived in a tent and log lean-to on some property. We cooked over a brick and stone hearth my parents built, all our food was from scratch. I because really good at cooking over a fire and coals, baking as well. It was the best time in my life

I LOVE duck! I love it roasted while over chopped potatoes, onions, whole cloves of garlic and herbs. The duck drippings crisp the potatoes underneath as the duck roasts (also stale bread cubes instead of potatoes is nice nice as well.

@@solitaire5856 Because back in August of 2022, me and my little brother Seth were watching The Wiggles Racing To The Rainbow. We saw Murray and Captain Feathersword singing Five Little Ducks together. Right after the song, there was a duck swimming in the water, looking very peaceful and beautiful while the instrumental version of Five Little Ducks was playing in the background. It broke my heart to realize that ducks, just like that one, were being hunted, shot, killed, plucked, and made into food.

Nutmeg in savory cooking is fantastic! It is an unlikely combo in modern cooking but in classic French it’s used in sauces, especially cheese sauces because it brings out the flavor. Much like adding salt to baked goods!

I am watching this at 2200 hrs, and now I am Starving.. Lols,,, Slim fast to the rescue.. I'll be making those Potatoes tomorrow for sure..... Thank you.. You take me back many year to when I would watch either my Grandmother or my Mother cook side by in the kitchen as I begged for scraps sitting at the table....... Boy those were good days.. Ducks shouldn't be made into food. It's because when I watched The Wiggles Racing To The Rainbow back in August, Murray and Captain Feathersword were both singing Five Little Ducks together. At the end of the song, there was a duck swimming in the water. The duck looked so peaceful and beautiful, but my heart was completely broken when I realized that ducks just like that one were being killed and made into food and other things.

I can taste the duck as I watch this video. I started roasting duck two years ago. When done right, it's delicious. Makes a heck of a mess in the oven.... splattering this way and that... but I love the taste of potatoes and onions roasted in the duck fat at the bottom of the pan. As to your spreading butter with breadcrumbs at the outset, that is something I've never heard of....and will try. As always, nice to see the wood burning fire blazing away....

I love watching the process, such simple ingredients but you can tell how delicious it was. Those fried crispy potatoes, yum and that duck, you could see how succulent it was, cooked perfectly by Justine. 😋🤗
