Recipe:
Ingredients:
-Basmati Rice 3 cups
-Water as required
-Namak (Salt) 1 & ½ tbs or to taste
-Badiyan ka phool (Star anise) 1
-Laung (Cloves) 6-7
-Lemon 2 sliced
-Cooking oil 1 cup
-Pyaz (Onion) 1 Cup
-Tamatar (Tomato) chopped 3 medium
-Hari mirch (Green chillies) 6-7
-Aalo bukhara (Dried plum) 4-5
-Imli (Tamarind) 5-6
-Sabut kali mirch (Black peppercorns) 1 tsp
-Zeera (Cumin seeds) 1 tsp
-Darchini (Cinnamon sticks) 1
-Badiyan ka phool (Star anise) 1
-Laung (Cloves) 3-4
-Badi elaichi (Black cardamom) 1
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Tamatar (Tomato) sliced 1 large
-Dhania powder (Coriander powder) 1 & ½ tbs
-Namak (Salt) 2 tsp or to taste
-Lal mirch powder (Red chilli powder) 2 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder 1 tsp
-Water 2 Cups
-Dahi (Yogurt) whisked 1 Cup
-Chicken mix boti 750g
-Zarda ka rang (Orange food color) ½ tsp
Directions:
-In a bowl,add basmati rice,water,wash thoroughly and soaked for 30 minutes then strain soaked rice & set aside.
-In a pot,add water & bring it to boil.
-Add salt,star anise/badiaan ,cinamon cloves,lemon slices cooking oil & mix well.
-Add soaked rice,mix well & boil until 3/4th done then strain & set aside.
-In a bowl,add yogurt, ginger garlic paste , briyani masala, chicken mix well & set aside for 2 hours.
-In a pot,add cumin seeds , cooking oil,onion & sauté until translucent.
-Add tomato,mix well & cook until soft (2-3 minutes).
-Add yogurt & chicken mix well.
-cook on medium flame until water is reduced (8-10 minutes).
-Add orange, yellow food color & mix well.
-Add & spread tomato & onion mixture,boiled rice,cover & cook on high flame for 4-5 minutes then steam cook on low flame for 15 minutes.
-Mix rice & serve with salad & raita!
