When making salsa, canning or freezing tomatoes it is best to remove the peel.
It is not an easy thing to remove that fine layer of peel with a knife, especially without losing chunks of tomato.
This video will show you an easy step that will help the peel slide. You simply pick the right tomatoes and drop them into a pot of boiling water for 30 seconds, then place them immediately in an ice water bath. Let cool, remove core and you're ready to go.
