I love this. It’s just a simple straight forward approach to an instructional video. He says in 6 minutes what 99% of KZbinrs would take 30 minutes to say. I’ve been wanting to try canning for awhile, but was always a little afraid because videos make it seem so complicated. This is the first video that made me feel like I could do it. Great job. So glad to see this method for canning tomato juice. We have done this for 60 years and never had an issue but everyone seems to thing you should pressure can them or the bath method. This so easy to do and I'm glad to see that we're not the only one using this method.

I have canned tomatoes with lemon juice for years. I opened a can that was 6 years old just a few days ago. Found it while I was moving. Honestly tasted great, just like the day it canned.

My mom always puts a teaspoon of salt in hers, no lemon juice. A friend told me she puts her jars in the dishwasher & puts her tomatoes in them while they’re still hot. Thanks for the video.

I started my seeds outside Mothers day weekend. I have around 50 tomato plants that are doing amazing. It takes more patience looking at everyone's green house tomatoes almost ready for picking while mine are just getting blooms. I wont be canning until the first of September. Glad I found this video. One question I use Tattler reusable lids do you think this method work for e lids? Maybe I should keep tomatoes boiling as I put them in the jars.

Are your jars just sitting on the oven racks or are they in a pan. If in a pan, is there water in the pan. Are the jars upside down in the oven?

I freeze my tomatoes Wash dry and keep in my freezer until I have enough to can. Then I put frozen in hot water. The skin splits off I use a knife to cut out the core and cook and can them. Easy You can use an immersion blender if you want more of a tomato sauce.

I have a couple questions....How long u simmer the tomatoes for and how long do u let jars get hot in oven at 220 for how long....Im doing this method..

I would personally put the jars in the oven, wash them, then put in the oven to dry and become sterile at 220 degrees while you are doing the other processes...they will reach the temp and be fine to start canning...boil the tomatoes on the stove until they are obviously boiling and then simmer while placing them into the jars to be sealed. you can always use a thermometer to check the heat content in the tomatoes...but boiling is key and you're all set.

We use earth boxes and 3x4 raised beds: 2 plants in the earth boxes and 6 in the raised beds. In the earthboxes we use Miracle Grow potting soil. In the raised beds, the mixture is roughly 5 parts Timberline topsoil to 5 parts Miracle Grow raised bed mix to 1 part Black Kow near the surface.

Make sure the tomatoes, lids, and jars are hot and don’t fill to the rim. Leave about an inch of space to form a vacuum. Make sure the rim of the jar has been wiped clean to get a good seal with the lid. You’ve got this!

So when you are actually canning the tomatoes and screw the lid on how long does it take for the middle part to suck in and be sealed? I tried this method a week ago on one small batch of tomatoes and though t it didn't work after 10-15 minutes so I just put the jar in the fridge and looked at it today and it actually sealed. Never heard it suck sealed but its sealed.

Just depends on temps and atmospheric pressure etc etc but if it seals you’re all set.

Do the jars have to be all the way to the top? I filled to just below the threads and I did get a seal on the jars. But when I showed my husband, he asked if they are supposed to be filled to the top. Now, I’m concerned.

You’re fine. When I’ve over filled them in the past I’ve had jars that didn’t seal as there was no room to form a vacuum.

If you can’t eat them within a couple years I’d give them away. But they’d probably last 5 10 maybe 20 years on the shelf if you reheated them. Maybe longer. Great question.

The acid helps with the preservation and just brings out the flavor in spaghetti, lasagna, chili, any homemade pasta sauce.
