Easy and Fast Berry Muffins

Easy and Fast Berry Muffins. This recipe is super fast and yields the best bakery style berry muffins ever.

Recipe:
1/2 cup unsalted, melted and cooled butter
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
3/4 cup oat milk (you can use any kind of milk you like)
1/4 cup sour cream
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoons baking soda
1/2 teaspoon salt
2 cups mixed berries (I used blueberries and raspberries but you can use whatever you have on hand)
zest of 1 lemon
1 tablespoon of lemon juice
Bake at 425f for 5 minutes, then lower heat to 375f and bake an additional 20-25 minutes until done.
