Sweet and Savory Root Veggies and Butternut Squash
This tastes just like Tzimmes!
1 large sweet potato, scrubbed, unpeeled and cut into 1.5” chunks
2 yellow or red potatoes, scrubbed, unpeeled and cut into 1.5” chunks
1 medium yam, scrubbed, peeled and cut into 1.5” chunks
1 small butternut squash, peeled and cut into 1.5” chunks
1 medium onion, diced
4 medium carrots, cut into 1” rounds
2 medium apples, any variety, peeled and cut into 1” chunks
1/2 cup golden raisins
1/2 cup pitted dates, cut into quarters
1/4 cup maple syrup or date syrup
Juice from 2 fresh oranges (about 1 cup)
Zest grated from 1 fresh orange
1 cup low-sodium vegetable broth
2 teaspoons cinnamon
1 teaspoon ground ginger
To your slow cooker add the sweet potato, yellow or red potatoes, yam, butternut squash, onion, carrots, apples, raisins, dates, maple or date syrup, orange juice, orange zest, broth, cinnamon, and ginger.
Cover and cook for 3 1/2 to 5 hours on High or 8 to 10 hours on Low, until veggies are tender to your taste.
