Some notes from someone born and raised in Hawaii, and worked at asian-style restaurants: First, everything looks amazing Josh! Great job of really doing your homework on a lot of these elements. For the Teriyaki, you don't need the corn starch step. If your teriyaki sauce is made correctly, there should be enough sugar in it to thicken the sauce just by bringing it to a light boil for about 5 minutes. For the Katsu, I would add some grated ginger/garlic to any part of your flour/egg/panko process. The hint of flavor that adds to the "crust" of your Katsu is what makes it pop if you ask me. And the green onions never go on the Mac Salad, even as a garnish. Put it on the Teri Chicken next time 🤙

One thing I was shown by a local was a small adjustment to the mac salad actually gives it that authentic texture you find in many versions on the islands. Slightly overcook your noodles, not al dente. And shave in some washed white onion! Changes things to a whole new level. Try it out sometime!

Another delicious version similar to Ono Hawaiian’s version, use frozen uncooked peas, diced red onion, shredded carrot, and imitation crab meat, Mayo, salt, pepper, garlic powder or fresh minced garlic. Also very tasty.

I grew up in Hawaii. This is one of the best treatments of Hawaiian style cuisine I've seen from a non-Hawaiian. The Katsu is more commonly chicken, by far, but nothing wrong with a good pork cutlet katsu at all, and it's 100% authentic. It would nearly always be served with a side of katsu sauce, and on a bed of shredded cabbage. If you make it with chicken breasts, cut the breast in half so that it's only half as thick. That way it will cook through much quicker and you are less likely to have to 'rescue' it because of a raw spot in the middle. The pork should be cut so it's not too thin (and you can also pound it out flatter, but I haven't done that personally.) Another commenter is correct... No garnish on the Mac salad normally. Garnish on the chicken teriyaki. Green onions and/or sesame seeds are authentic on the Teri chicken. The very saucy Teri presentation would be unusual in a Hawaiian plate lunch place. Usually just a marinated thigh, which may or may not be chopped up. No need to add an extra round of sauce. I'd finish the teri chicken under the broiler to give it a nice char, then garnish with sesame seeds and maybe green onion. Serve with POG juice. ONO!

A long time ago, I got a recipe for Hawaiian barbecue chicken from a local that was better than any of the side of the road places we tried in Hawaii. Great recipes should be shared. Here it is... Hawaiian Barbecue Chicken Chicken Thighs 1 C. packed light brown sugar 1 C. soy sauce 4-5 cloves of garlic chopped 1 1/2 T. fresh ginger root chopped 1/4-1/2 large onion sliced 1 stick of salted butter after grilling 4-5 green onions, sliced small In a bowl, mix the brown sugar and soy sauce together. Keep mixing until almost all the sugar is dissolved in the soy sauce. Add in the garlic, ginger and onion and mix. Let the mixture sit for a few minutes. Put meat into a zip lock bag and pour mixture over it. Depending on how much meat you have you may need to make more marinade and split this into 2 different bags. Let this marinade for at least 4 hours. When ready to grill, put melted butter in 13x9 Pyrex dish. When the meat is grilled, put them in the Pyrex dish to bath in butter. When all the meat is done, add the green onions.

As a person who not only grew up in Hawaii, but is also part-Native Hawaiian, I really appreciated this video. The only criticisms I have is with the mac salad. I personally have always overcooked the noodles for my homemade mac. Also adding some finely diced white onion and MSG will take it to a whole new level.

I think the mistake most people make with mac salad is putting too many ingredients in it. I like simple potato mac with mayo, maybe onion, salt pepper and that's it. Mainland style has celery, herbs and floofy stuff. You want a carb bomb with the usual plate lunch of katsu and teriyaki. Perfect.

While I love a quick plate lunch, I've gotta say. Nothing beats a good loco moco. Fantastic in every single way imaginable. The soft rice, a savory beef patty, a rich gooey egg, and the gravy bow to tie it all together. My go to every day when I don't know what to eat. I like to caramelize some onions to put in between my beef patty and rice for a little extra OOMPH, and add mushrooms to my beef gravy

As a Hawaii Resident, you did a great job making what we call a plate lunch. The Mac salad is a staple with all of our local style plate lunches here and the Teri chicken/Pork Katsu combo is a winner. As we would say here, looks “Ono” which means delicious. I ate the mixed plate at a place called Aloha Mixed Plate on Maui. It was amazing, we went back several times! One note, the mixed plate also can be made with Kalua pork (a type of pulled pork that is perfect without BBQ sauce). 10/10. Would recommend!

Yeah, L&L is a big chain. We had them in Vegas too, and honestly I really didn't care for them. The mac salad in particular was just super thick and not very flavorful in my experience. If you ever go to Vegas (and are willing to get off the strip), Ohana is a good smaller chain, and honestly the best local spot is called Volcano Grille. It's awesome!

As someone from Hawaii, your kinda close, katsu with pork is called Tonkatsu, and nobody calls it teri chicken, we just call it bbq chicken, the plate lunch is all about portioning, its about getting a good meal for a decent price

I'm curious about what type of mayo you use for your Mac salad. A lot of times I'll judge a place on the Mac salad because bbq chicken and katsu is done by pretty much everyone. If it's good Mac, den I go back! Btw, for those who done know, Josh made a mix plate. Mix plate has more than one menu option. If it were just katsu or just all teri chicken then it would just be called a plate lunch. All plate lunch come with two scoops of rice and a scoop of Mac. Mini plates only have one scoop rice and Mac and usually are not mix with the second menu item. Sometimes there is an option for mixed green salad to replace the Mac.

There's something so different about Hawaiian macaroni salad that makes it taste so good compared to regular macaroni salad. The Hawaiian BBQ place I order from in my town (it's a chain, Ono Hawaiian BBQ) includes steamed cabbage with their plates and I love it so much.

Josh, thank you so much for emphasizing the importance of mac salad. My family is from Hawaii and I grew up with "2 scoop rice, 1 scoop mac salad" imprinted in my brain. Love your videos. If you're in the islands, try plate lunch from L&L Drive In

Tip: green onion is garnish for teriyaki (whichever protein you want). And no slurry for the teriyaki sauce. Otherwise it was a really good video. Ever thought about doing a series on our plate lunch? Might be interesting

I'm totally with you there on the macaroni salad. I know it's a rice bowl but rice is so plain. I'm the weird guy who substitutes the rice for an extra serving of MAC. Love Hawaiian BBQ

Probably the only thing that I would add to that dish (maybe as a substitute for a protein) is a spam musubi. Personal preferences aside, chicken katsu is more common, but it is indeed 100% authentic. Tonkatsu (Japanese fried pork cutlet) is way more delicious and it is up to you to choose the type of katsu to serve in the dish. There's quite a few varieties for you to mix and match. Makes me want to grab some fried (coconut) shrimp instead for an alternate Hawaiian plate.

It's usually a potato-nac salad. Potato salad and macaroni salad mixed together. SO delicious!

So I'm being that guy, but a Hawaiian BBQ plate is actually Kalbi (Korean), Katsu (Japanese), Teriyaki (Japanese), steamed sticky rice and Mac salad (American-US mainland). There's nothing really natively Hawaiian about it, which isn't a big deal, but I don't think some folks realize that about the BBQ part of the dish especially.

To take the mac salad to the next level add a can of crab meat (my grandma's recipe, a staple at all family gatherings). Also fresh ground pepper on top to serve.
