Easy Bangladeshi-Style Basa Fish Curry

Ingredients:
To fry the fish:
-Basa/swai fish filet, cut into bite sized pieces - 1 lb
-Salt - 1/3 tsp
-Turmeric powder - 1/3 tsp
-Oil - 1/2 cup
For the curry:
-Oil - 1/2 cup (reuse after frying fish)
-Onion, chopped - 2/3 cup, or can combine with onion paste
-Garlic paste - 1 tbsp
-Ginger paste - 1 tbsp
-Turmeric powder - 1/2 tsp
-Chili powder - 3/4 tsp, or adjust to desired spice level
-Salt - 3/4 tsp
-Coriander powder - 1/2 tsp
-Fenugreek seeds (methi) - 1/2 tsp
-Water - add as needed
-Cumin powder - 1/2 tsp
-Green chilies - as desired
-Cilantro - garnish

I definitely plan to follow your recipe. It looks very attractive and if I can achieve results like you, this will be a forever recipe for me to repeat many times over. I have a question which I hope you will answer. You achieved that wonderful look for the dish, and of course that indicates great taste as well. The question is how is that wonderful, clear broth achieved? It is just perfectly right - not stuffy and thick with masala and not watery either. Please open that secret for me! Thank you for a wonderful recipe, unique in its own right.

Thanks, I tried it and it is awesome. So far I only baked and fried basa. From now on, it will be the only recipe we will try with Basa. Good vibes from Canada.

In the US, this fish is sold as both "basa" and "swai." You can cook this same recipe by substituting the fish with tilapia, if that is easier to find. If you're in Bangladesh you can make this dish with "shoal" fish.
