I think it's an XLR cable rather than 1/4" phono.

I know Justin Chancellor from Tool uses a Wal with an XLR in the studio. It's an option on some high end basses (and guitars) for people who are very particular about a clean, balanced signal. There are also XLR cables with 5 pins that can provide power, and maybe that's powering the active pickups. ¯\_(ツ)_/¯ Mark has made videos in the past about his Enfield Lionhart and his modified Marcus Miller Jazz Bass, but I don't think he's done one about this one.

I wonder that too. When it comes to bass it seems like everything is a 7th. Though a 7th isn't much different from basic chords so it's not much trouble.

Hulavuta a common genre of a bass player would play is jazz, and jazz chords are normally in 7ths, all the sample songs on this video were jazz as well

It's not only about the jazz. Most blues harmonies are based on 7th chords. Namely I7 (first), IV7 (fourth) and V7 (fifth). Many musicians these days say "why play a regular chord when you can play a 7th?". As was well noted it's still a matter of genre, but in general 7ths sound more interesting than plain triads. In addition the probability of spoiling the mix when everybody's playing C and the bass player takes CMaj7 is almost zero.

It's just arpeggios; taking chords and isolating all the notes to make the chord dance.

In a sense, yes. You would be using music theory to construct bass lines and fills that sound good. Music theory is essentially the framework we use to explain why certain things sound good in music, and why other things don't.
