Trimming it is indeed the most intimidating part. Your piece looks amazing though - Here in Norway, it's pretty difficult to find brisket besides in butcher shops (which we have like 2 or 3 of in the capital). Excited to try it one day. Good work!

@@lil_pai thanks! It is fairly difficult in the UK too, tend to have to find an online specialist for this American style cut. Getting easier as BBQ grows in this part of the world though.
