Butter chicken
Serving size: 4
Ingredients:
For the Gravy
4 large Tomatoes, cut into half
2-3 large Onions, sliced
3-4 Garlic pods
1 inch-Ginger, sliced
1 tbsp kashmiri red chili powder
5-6 Cloves
1 inch-Cinnamon Stick
3 Bay Leaves
2 Green Cardamoms
2 tbsp Butter(optional)
Salt to taste
Chicken tawa tikka
Chicken marination(1st)
500 gm boneless chicken cubes/pieces
2 tablespoon yogurt
1 teaspoon salt
1 tablespoon lemon juice
1 tablespoon ginger garlic paste
Mix well and rest for 15 minutes
(2nd)
In a bowl add 2 tablespoon mustard oil,1 teaspoon Kashmiri Red Chilli Powder,1 teaspoon garam masala powder. Mix it well. Squeeze extra juice from marinated chicken and add in this mixture. Mix well and rest for 15 minutes. Place a griddle on medium high flame and brush with vegetable oil. Fry chicken pieces from both sides.
For Butter Chicken
2 tbsp Butter
2 tablespoon oil
1/2 onion sliced
1 tbsp Kashmiri Red Chilli powder
1 tsp Coriander powder
Prepared Gravy
3 tbsp Fresh Cream
1 tsp Honey(optional)
Cooked Tawa Chicken tikka, shredded
1 tbsp Dried Fenugreek Leaves, toasted & crushed
Burnt Charcoal(optional)
Fresh Cream
Coriander Spring(garnish)
For the Base Gravy
In a heavy bottom pan, add ½ cup water.
Add tomatoes, onions, garlic, ginger, Kashmiri red chili powder and all the whole spices. Mix well.
Add salt and mix well. Cover the cook for 15 minutes.
Once the tomatoes are soft, with a hand blender(or mixer grinder), blend the gravy till smooth.
Strain the gravy through a strainer.
For Butter Chicken
In a pan, add butter and vegetable oil, and allow it to melt. Add sliced onion, red chilli powder and coriander powder, cook for a minute.
Pour prepared gravy, mix well and cook for 2-3 minutes.
Add fresh cream, honey, shredded chicken, mix well and cook for another 3-4 minutes.
Add dried fenugreek leaves and cook for 2 minutes.
(In a small metal bowl, add burnt charcoal and place it in the middle of the gravy.
Pour butter over charcoal and immediately cover with a lid, keep it 1 minute for the smoky flavour. Once done, remove the charcoal bowl. )Optional
Transfer the butter chicken in a serving bowl. Garnish with fresh cream and coriander spring . Serve hot with roti or rice.
