Hi no it can't be the granulated sugar cause I've used it many times,try to not over knead your dough or add to much flour when cutting your scones your dough should be a little wet but not so wet that u can't cut it if that makes sense

Comes out perfectly...shukran...I use margarine...good quality type like Rama or Stork bake..don't use spreads...handle as lightly as possible.

Don't roll it out to thin,when cutting Into shapes never twist your cutter,when brushing with egg on top don't let it drip down the sides all these things can stop your scones from raising,also make sure your butter is cold and don't over work your dough,hope that helps.
