Here is a simple way to make capirotada. I used mini loaf baking cups for individual servings.
INGREDIENTS FOR FULL RECIPE
6 to 8 Pan Bolillio Rolls
4 1/2 cups water
8 oz piloncillo (or 1 1/2 cup brown sugar)
2 to 3 cinnamon sticks
1/2 cup raisins
1 cup mozzarella cheese (shredded)
9x13 baking dish
2 tbls butter (optiona)
MINI LOAF RECIPE
4 mini loaf baking cups (or 8x8x 2 inch baking pan)
4 pan bolillio rolls
I used 2 1/2 to 3 cups of the sugar syrup
1/3 cup raisins
1/2 cup of shredded mozzarella cheese
2 tbls unsalted butter

You are the best cooking tutor. I've seen other channels and they either talk tooooooo much about everything except what they're doing or their filming is terrible, but you are excellent......to the point, clear, simple and beautifully filmed.

my mom makes her Capirotada with regular milk and condensed milk, piloncillo and cinammon. She also sprinkles shredded coconut and cheese on top but she uses cotija cheese. i live in San Antonio Texas and i got use to the way they make it here, they are both delicious 😊

I soak white raisens in Mexican vanilla over night for recipes....it adds great plump flavor. Thks for this recipe.

I made your enchlad6 cassarole the other day and I must say it was absolutely the best and I'm an African American we don't typically Cook mexican but again like you I love to cook it is my passion. I hope my daughter will continue on that passion for her children.😊

I remember watching my mom make capirotada and she would fry the bolillo in lard, and mix in cut pieces of tortilla to add to the texture as well as add orange rounds with the peel and she would make a giant pot every time, good memories! 😋

Yum! I actually like to add apple, banana, shredded coconut, raisins, crushed pineapple and cheese. I might have to try the orange and frying the pan bolillo next time. Sounds so good. :)

This takes me back my mom& grandma used to make this! Now i make my own version w/cranberries &walnuts or pecans wutevr I have & a sweet bourbon cinnamon sauce on top. Then usually my husband will top his warm slice with vanilla ice cream...

Great video!! I have become obsessed with CAPIROTADA videos! 😂 The variations seem endless and personalization (depending on personal likes/diet restrictions) is great! The important thing, I think, is the balance of the sweet & savory. Never liked it as a kid because the texture is “mushy” but I made my first-ever batch this Easter and my husband and I LOVED IT! We did not crumble the bread but instead sliced, toasted & buttered…ours included 1/2 C. each of raisins, peanuts, sliced almonds, chopped pecans & shredded coconut plus a whole COTIJA cheese. And I also added whole cloves to the “tea.” The taste is well balanced without being overly sweet.

I make it exactly like you but I add anise seeds to the tea. That's how my aunt taught me to do it. I love capirotada. I love your videos.

We would make ours with mexican tarragon we grew in our garden. It has a very similar anise/licorice taste that's great in the capirotada.

My grandmother was from Mexico and would add sliced tomatoes to the top of the capirotada. Sounds weird, but once it's cooked it actually adds a lovely flavor and texture to it. She used shredded cheddar cheese (rather than mozzarella) and pecans also. Also, she toasted her sliced bread on the comal IN LARD... your way is much more efficient and a bit healthier. :) Other than that AGAIN, it seems like we are somehow related. Great video!

wow! looks so good. Reminds me of my grandmother. You must have really paid attention to yours or your mom and learned alot from them because all of your dishes you make are so authentic. Do you write all your recipes down or do you have it all memorized?. I love capirotara :D

Thank you! My maternal grandmother actually had a very limited repertoire in the kitchen, but my grandfather did a lot of cooking. I also learned alot from my Dad's side of the family. My Dad actually taught me to make Mexican rice. My paternal grandfather used to help my grandmother make tortillas and was really good at it. 😅 Thank you so much for watching my videos. I really do love to cook and share recipes.

I might suggest to freeze the cub of butter and grate it onto the top of the baking dishes... It's easy and Even. Delicious looking Recipe.

Great recipe! Easy and I love the idea of individual pans to give as gifts!! Also I think it's a regional thing...different areas based on what's available is used...my abuela and bisabuela used 2 kinds of cheese..bananas and walnuts...as much as I love it my husband has a nut allergy like ur son so I make it without as well!! Thank you for ur awesome video!! It brings back memories and the nostalgia of the wonderful smell!! 💜💜

HI Mexi Mama....gee this is so different to our traditional bread pudding here in Australia....of course some ingredients are the same ..bread ( of course...but ours is just to be stale) , sugar, raisins..other things we use are milk, eggs, cream, vanilla...some people spread the bread with jam n butter before layering. Thanks for showing us the traditional Mexican way...it was interesting seeing such a different way of baking a bread pudding. Ps. Your paper bakeware are just so cute...I’ve never seen anything like them before...such a great gift idea...I bet your family members devoured them!? Well done 👍🏻

I think I'll make this during Lenten. I'm not a fan of cheese. I usually like it the way you described it with the other ingredients. I know when I was younger, they did add these big round colorful candies. Now I guess they sprinkle them tiny candies that is used on birthday cakes. Love your channel and cooking.

My Mommie makes Capirotada every year for Christmas. I love the stuff. Not many families (that I know of) even know what it is. My Mom makes hers with either walnuts or pecans and apples. Mmmmmm! served nice and warm with a scoop of vanilla ice cream. Yum! Yum! =p

My grandmother made hers in a massive roasting pan, like you would use for a turkey. She always used peanuts and jack cheese and sliced whole grain bread which she had toasted in big batches. One of my absolute favorite things growing up. I like that you kept yours simple!

I miss having peanuts...😕. My son is allergic to them. I remember our neighbor would put coconut, candy coated peanuts, raisins, apples, cheese and even bananas. It was really good. 👍

Gochujang Mamá sorry to here about your sons allergy...it makes things very hard. My son has a gluten allergy which makes baking a challenge 🙁 but at least it’s not as severe as anaphylactic 😣...do you have epi-pens at the ready? It must be a scary thing? Thanks G-mama 🙂👍🏻

I wish I had paid more attention in the kitchen with my grandma my mom's side of family is Mexican and I was raised by them. Grams would cook all day every day, one thing I miss was her biscochitos do u have a recipe for that?

I just watched your video that you tell us you are sick with walking pneumonia. Comments were disabled so I came here to say I sincerely hope you feel better fast! The "water" used is a "tea" made of a piloncillo cone (brown sugar, almonds, vanilla, clives, nutmeg, ginger) and cinnamon. It is watered down because this is a Lenten meal. A time for fasting. 😊 But, by all means, make it your own. You have to eat it. 😂 There are MANY variations of this recipe. The one I make is an old Spanish recipe. Each ingredient represents a time in Christ's life. This is the most simple recipe I have found. It is also the one I will be using this year. 😊 Good luck. I'm sure the apple juice will be great in it.

That was so plain, my mama used bananas apples and raisins, but the piloncillo is a must ,you cannot substitute with anything else
