INGREDIENTS NEEDED
3lbs { 1.3kg } chicken thighs, boneless and skinless
2 Tbs Vegetable oil
1 Tbs Curry powder
1 Tsp Coriander powder
1 Tsp Cumin powder
1 Tsp Turmeric
1 Tsp Chili powder
1/2 c Plain yogurt
1 Red onion, peeled and diced
1 Tbs Garlic, chopped
1 Tbs Ginger, minced
2 Ripe tomatoes, diced
2 Bay leaves
6 Curry leaves , optional
1 Jalapeno or green chili, cut across
1 Lemon zested and juiced
Cilantro and scallions to cook and garnish
