Stir Fried Chicken with Ginger (ไก่ผัดขิง) is one of our all-time favorite dish at home. In this video, we would like share with you some simple tips to make the chicken super tender and ready to stir fry. Please enjoy!
*INGREDIENTS * for 1 - 2 servings
▪Prepare the chicken
7.05 oz (200g) Chicken breast (skin-off), cut into thinly slices
1 Egg (use only egg white)
1 Tbsp. Corn flour (Corn starch)
▪For Stir Fry
2 Tbsp. Vegetable oil
1 Tbsp. ( 10g )Minced garlic
3.53 oz (100 g) Young ginger, julienne
▪1 tsp. Salt (for mixing and then rinsing the ginger with water 3-4 times before stir fry)
2.12 oz (60g) Onion, cut into wedges
1.41 oz (40g)Wood ear mushroom, cut into bite-sized pieces
1 Red spur chili (15g), cut diagonally
1 Green spur chili (15g), cut diagonally
▪For the Sauce
1 Tbsp. Mushroom vegetarian sauce
½ Tbsp. Soy sauce
½ Tbsp. Golden Mountain seasoning sauce
½ Tbsp Sweet soy sauce

ส่วนประกอบ สำหรับ 1 -2 เสิร์ฟ
▪สำหรับหมักไก่
เนื้ออกไก่ไม่ติดหนัง 200 กรัม
แป้งข้าวโพด 1 ช้อนโต๊ะ
ไข่ไก่ 1 ฟอง (ใช้แต่ไข่ขาว)
▪สำหรับซอส
ซอสเห็ดหอม 1 ช้อนโต๊ะ
ซอสฝาเขียว ½ ช้อนโต๊ะ
ซีอิ๊วขาว ½ ช้อนโต๊ะ
ซีอิ๊วดำ สูตรหวาน ½ ช้อนโต๊ะ
▪สำหรับผัด
น้ำมันพืช 2 ช้อนโต๊ะ
กระเทียมสับ 1 ช้อนโต๊ะ (10 กรัม)
ขิงอ่อนซอย 100 กรัม
(ก่อนผัดคลุกขิงอ่อนซอยด้วยเกลือ 1 ช้อนชาแล้วล้างด้วยน้ำประมาณ 3 -4 ครั้ง )
หอมใหญ่ 60 กรัม
เห็ดหูหนูดำ 40 กรัม
พริกชี้ฟ้าแดง 1 เม็ด (15 กรัม)
พริกชี้ฟ้าเขียว 1 เม็ด (15 กรัม)
