Shopping List
2 lbs boneless skinless chicken thighs
1-2 lbs large shrimp
1 lime
1 green, red, and yellow bell pepper
2 onions
cooking oil
cilantro (for garnish)
tortillas
(serve with yellow rice and black beans or as a salad)
Marinade:
1/4 cup green onion
1/4 cup cilantro
2 limes (juiced)
1-2 jalapenos
2 tbsps sugar
2 tbps soy sauce
smoked paprika, chipotle chile powder, ancho chile powder, cumin (1/2 tsp each - more to taste)
1/4 cup olive oil
1-2 tbsp garlic paste
salt, pepper, garlic, onion powder
1/4 cup cold water
Blend marinade ingredients together and taste as you go. Adjust flavor to your preference. Marinade chicken for 1-24 hours and shrimp for 30-60 minutes max. Chicken thighs are done at 175 internal temp and shrimp at 145.
