✅Ingredients
• ⅔ cup all-purpose flour
• ½ teaspoon salt
• 3 eggs
• 1 cup milk
• 5 tablespoons butter, for cooking
✅Instructions

1️⃣ 00:00:12 - In a large bowl, stir together flour and salt. Add in eggs and whisk to combine.
2️⃣ 00:00:37 - Slowly pour in milk, whisking until you have a smooth, pourable batter.
3️⃣ 00:00:55 - Heat a 12-inch nonstick skillet over medium heat. Let 1/2 tablespoon of butter melt in the pan.
4️⃣ 00:01:12 - Pour a little of the crepe batter in the pan and swirl it around to cover the bottom of the pan. Let cook about 1 minute, until surface loses its shine. Flip carefully.
5️⃣ 00:01:57 - Repeat until all batter has been used, melting another 1/2 tablespoon of butter for each. This recipe makes about 10 crepes.

Are we supposed to fluff, spoon then level the 2/3 cups of flour like you would if you were making cupcakes/cakes or just pack the cup? I haven't made crepes since Jr High. The recipe I had got lost many yrs ago so I'm really excited that I found your video. I always made sweet crepes for my family but with this recipe I plan to mix it up and do both. That would be an amazing brunch!! 😋 I have another question. Can I refrigerate any leftover batter? If yes, for how long? Thanks Rachel....🤗

Edit... I made them. I only made half of the recipe which turned out fine even though I never got an answer to my question. I made them sweet and savory. Basically 2 of ea. I made my savory ones 1st then added some vanilla to the batter for my sweet crepes. I filled the savory ones with a mixture of cooked red and yellow peppers, some chunks of onions and 1 diced up spicy Andouille sausage. OMGosh it was SO good!! Later I filled my sweet crepes with Biscoff spread and sprinkled some powdered sugar on top. What a treat that was. Thanks so much for the recipe. It's been a couple of decades since I've had/made crepes. I of course saved the video to my playlist... 🤗

I made your restaurant style mashed potatoes and my family and myself LOVED them so I had to give your other recipes a try. I just made the crepes this morning for my kids and yes of course myself 😁 and they taste like how my mom makes them! I was shocked that I was able to make them! I was shocked when she suggested a cast iron skillet, but then she pulled out a non-stick skillet. I honestly don't know how they made crepes before teflon, but they did so for centuries.

We freeze them but only for a month or so, I don't know how long they can stay frozen. Put a sheet of waxed paper between each one. When defrosting spread them out so they are not wet from condensation before filling.

French advice the milk should be room temperature and do not use that much butter ! 😲 Use a cloth or paper to give your pan a little grease with butter. A bit of beer is nice for an airy batter

I tried this, this is how I tried crepe for the first time. It tasted like under cooked pancake (even though it was brown) and dairy and gluten free egg replacer, aka not very good.

The recipe wasn’t designed for almond flour so perhaps that’s where you went wrong.

No, sugar is not necessary. But yes, almond flour is very very different from all purpose flour and it doesn’t work as a substitute for most recipes.

1 cup is a volume measurement. Grams are a weight measurement. The conversion for each ingredient is different because different ingredients weigh different amounts in the same volume.

1 cup is a standard unit of measurement. It doesn't refer to a drinking glass. There is a metric converter on my site and numerous more online.

If anything can burn and stick to your cast iron then it hasn't been properly seasoned. You can make crepes in a cast iron pan.

Pretty basic.. melt the butter and add it to the batter to avoid having to butter that pan each time.. that's the traditional way

@@Thestayathomechef There's a reason for a flat and not a shaped, or wok-like pan with high sides. You might get it done with that large of a flat area, but a low-edge pan helps the batter spread and cook evenly and able u to remove the crepe by sliding it off and not using tools to flip it and damage it. Your first flip wasn't even cooked, and you should pour batter while turning the pan to evenly cover the pan and have no breaks. This is why you have a break and cracks in yours and that's also why it's not a crepe anymore. Can't get it right, don't put it on a video to tell people what it is vs being a mistake. This is heritage for me, and all these retail spaces selling pancake/blintz-like or hard batter cones shaped product versions aren't Crepes and are so far from the taste, feel, and elegance of that pastry. Not using the right flour - rice - and doing it wrong makes it not a Crepe! These places and "so-called crepe places" don't even know you're not supposed to use the same batter and mix for Savory vs Sweet, as it's a Galette, not a Crepe! That's why all this isn't right. Its' probably edible with topping, but remember a Crepe is just served with plain white sugar and not covered up to hide the flavor. Destroying heritage foods and recipes. Restaurant quality, not quite.
