INGREDIENTS:
FOR SOAKING & SEASONING CHANNA:
4 cups channa (soak overnight)
1 teaspoon baking powder
1 onion (chopped fine)
5 cloves garlic (chopped fine)
5 pimento peppers (chopped fine)
Hot pepper (chopped)- optional
1 teaspoon Salt
1 - 2 Tablespoons Green seasoning- • TRINIDAD GREEN SEASONI... (a blend of chadon beni, garlic, chive, pimento peppers, fine thyme, broad leaf thyme, parsley, celery and piece of fresh ginger)
FOR COOKNG:- (LOW TO MEDIUM HEAT- 3.5 to 4.0)
4 to 5 big potatoes (peeled, wash, cut in half)
1 potspoon vegetable oil
Handful curry leaves
1 Tablespoon whole geera
1/2 teaspoon mathee (fenugreek)
1 onion (sliced)
3 cloves garlic (chopped)
3 pimento peppers (chopped)
1 Tablespoon saffron powder
1 Tablespoon curry powder mixed with a little water- amzn.to/3Fxq8gX
1 Tomato (blanch to remove skin and chop)
Potatoes (peeled, wash and cut)
Seasoned Channa
1 tsp Salt
Kettle full of hot water
