Looks great--loved my gramma's schnitzel when I was a kid! Going to try this with some seitan as I have learned I have a family history of Cancer so need to avoid the BLV, igf-1 and pesticides in meat. Thank you for sharing

Thanks for watching - Absolutely- we used Organic Tofu, which is basically just soy... I stopped eating meat a few years ago, but before only bought directly from farms I visited and knew about. Heath is first - this recipe would work with anything! another tip- try with Eggplant!!! only thing, before you do, make slices about half inch wide and sprinkle with salt and let it sit on paper towel for 20-30 minutes. the salt helps extract the moisture... all the rest is identical!
