I'm with Mandy. I always pick the stems off of spinach. I like Hillshire Farms skinless Kielbasa or Smoked sausage. I cut it into disks and saute' it. I add a tablespoon of butter to the pan to brown the sausage. I leave the foundant in the pan. I add my other ingredients, it adds so much flavor to your dish. I buy when it is on sale and freeze it. It cuts real easy when it is frozen.

I think the butter amount depends on the pan you are using. If using a cast iron or stainless steel, a lot of that butter would stick and create a fond, which I don't find those ceramic pans do very well. And I definitely have to cut those stems off because they don't cook down like the leaf, so they get stuck in my teeth. However, I would never dare to tell someone else what to do with their spinach stems!
