Put your Carboy on a piece of styrofoam. The ambient temp takes longer to cool down than the siding of the freezer which is in direct contact with the carboy and can shock the yeast

Just curious how this set up has held up over the years. I plan on doing the same with my freeze. I do like the ink bird method which would allow me to go back to full freezing if I chose to. Thank for the video.

I went ahead and got the Wi-Fi inkbird controller. It works fantastic! I highly recommend a Rechargeable Desiccant Pack. I was getting a lot of moisture before. I mean dripping. I put one of those desiccate packs in the freezer basket and now nice and dry.

This would work even better if you replace the thermostat with one more suited for higher temperatures (10-30C / 50-90F) and place the probe inside the fermenter. It takes longer to cool but it happens smoothly and once you reach the required temperature, there will be very little fluctuations (if any at all), giving the yeast much more reliable, stress-free environment. I've made a fermenting chamber from scratch that can fit my 160L fermenter, using parts from an old refrigerator. It works great for lagers, too.

Seams like a refrigerator would work as well? I have dodged the issue of lower temperatures in the summer by using Voss kveik yeast as it will ferment up to 104 degrees.

Yea you probably could. Would want to use a temperature controller and probe to hold proper temperature if needed.

@@FamilyDIY Yes I would use the temperature controller and probe. I brew small batches so I don't need anything that big. Voss Kveik is unreal. I had it in an outdoor closet where the temperature 90 + and it was just fermenting away.

Use carboy straps. Find some sturdy ones that are strong and work well with your body and the kegerator you're going to use (i.e. don't use a side-strap setup if you're going to be lowering the carboy into your kegerator).

Hi there, would these pads work to help regulate the temp of the entire chest freezer? Or will they only transfer enough heat to warm up a carboy directly on top? I am trying to cold stabilize my wine around 32 degrees using the Inkbird in a chest freezer, but it overshoots by 11 degrees, going down to 21 degrees over about five minutes, before returning to 32 degrees over the course of about fifteen minutes. That is pretty wild fluctuation. I don't want to freeze the wine, but keep it just above freezing (I guess around 25-28F for my 12-13%ABV wine). I'm not sure if a heat pad would help lower its range of fluctuation.

How many 5 gallon brews will that chest hold?

Currently with my setup a can fit one of my fermenters in at a time. Could easily get narrower ones to do more. More than enough space for bottles. My local home brew found they could fit 4 kegs, CO2 tank, & some bottles.
