In Iraq, we cook the chickpeas(hummus) with baking soda for tenderness, we also start the food processor then add the ingredients while the processor is working, a quick tip to make the hummus more creamy is to add ice cubes to the processor at the end it’ll make it fluffy and creamy :)

I buy chickpeas in a 1 kg bag, soak them for 24 hours, changing the water 2-3 times. After a day, I cook the chickpeas for an hour. I put them in freezer bags, ready for hummus, falafel or soups. I never buy chickpeas in a tin anymore. Just a pro-tip from an amateur. 😅

My cousin's Lebanese husband likes his hummus extra lemony. In a pinch, if you don't have tahini, you can sub out peanut butter, just add a little vinegar as tahini is sharper flavored than peanut butter.

Hi John, just made this recipe and I would have to say it is perfect! I did simmer the beans and remove the skins. The creamy texture is dreamy. All the spices and seasonings and lemon were perfect. I'm Lebanese and hummous is originally a lebanese dish. All you need is chickpeas, tahini, salt, and lemon. Garlic clove is optional. Also boil your own chickpeas after soaking them in baking soda and giving them a rinse so they cook faster and turn out soft. Blend everything and adjust according to taste. Also drizzle with extra virgin olive oil when serving. Enjoy.

You can cook chicken peas in a pressure cooker too soak them overnight with a spoonful of baking soda- cook the next day in a the pressure cooker- done in 20 minutes or even faster in an insta pot 6:23

Everything he did was right , good job. There is always a slight difference between the restaurants and home made hummus that’s the restaurant’s is MORE creamy and soft due to the chick peas grinder’s rotation power which is much more high in its turn will make the texture softer 😋😋😋😋😋

I'm new to hummus - tried Target Brand's Good & Gather classic hummus & fell in love ! It reminded me of the gooey part of a deviled egg -something I gave up years ago because of the cholesterol & sugar 😜So really; Thank You for this ! Homemade is always better but I was afraid to experiment with ingredients I knew nothing about! Seriously, a garlic clove is intimidatingly foreign! I'd love if someone could suggest a recipe for a black bean hummus (which sadly, Target/Good & Gather no longer sell) it has ingredients that I'm really unfamiliar with & normally would be afraid of 😊 but reminds me of being a teen in the 70's when I survived on doritos & black bean dip 🤫 dunno how, but black beans,tomatoes,garlic, jalapenos,lemon,lime,onion, cilantro really do make my heart sing 😆

I have battled high cholesterol for many years. No one else in my fam had that problem. At one time my totals were over 400! My doc got me on the right station...Crestor almost killed me before cholesterol could! It's kept me below 200 for years, with higher good numbers. Anyway Idk what your Doc says, but mine and many others say that eggs are not the enemy they were made out to be. Everything in moderation. I know there are many good alternatives now, but I don't bother since they're so expensive. And if you crave a devilled egg now and then...ask your Doc.😊

@@laurametheny1008 Good Doctors (that aren't specialists) are unicorns, so if you found one, you're extremely blessed ! those without Unicorns are left without the means to interpret & implement the right treatment ( lifestyle, diet, etc.) Oh for a day when until functional medicine becomes the norm! That said, once you've had a stroke & without the benefit of frequent blood tests to monitor your cholesterol , you kinda want to err on the side of caution because it gets to the point of : "who do you trust" when you're playing with your health 😋 I'm not saying you're wrong about eggs, just that I don't have a unicorn Doctor, so hummus seems like a super easy no brainer !

Chickpeas: Soak dried chickpeas (2-3 cups) in cold water with 1 tablespoon of baking soda. Soak overnight. Next day, rinse and place chickpeas into a pot and add cold water until one inch under. Add 1/2 tablespoon of salt and 2 bay leaves. Boil for about 1 hour. Drain, and cover in cold water for a few minutes. If you gently rub the chickpeas in your hand, all the skin comes off!

I adore hummus! Actually bought the ingredients once to make some and share with my dear late Mama, but alas my procrastination issue made me wit too long😓 How long does Tahini last? It's not cheap and I'm on a fixed, so I'm hoping I can still use it. If I can bring myself to. I just got some last night! And here is your vid. Hmmm...perhaps that's a sign? I love roasted pepper and garlic by the spoonfuls in mine. No cilantro. I'm one of those people who thinks it tastes like soap lol. That really is a genetic thing! I like to add cooked beetroot and fresh mint to my hummus. delicious, amazing color. ooooor try to burn a little smoked paprika in butter, and add it along with cooked pastırma (kind of a beef bacon) and eat it when it is warm. not very heart friendly and less healthy but amazing.

I made the hummus twice already and let me tell you... It's amazing, creamy, tasty, a perfect base. The only thing I struggle with is getting rid of the skin. Somehow cooking the chickpeas doesn't work for me and I spend a lot of time separating each pea from it's skin 😅

I just remove each chick pea skin by hand. It’s actually very calming. For add ins, I like to use sun dried tomatoes (the ones packed in oil). Another yummy version is marinated artichoke hearts. If you make a version with fresh basil and avocado, the result is what would happen if hummus and guacamole had a child. 😅

Yummy! I used to make shortbread all the time as a kid. Big family. Easy and cheap and so good. Also put Nutella on my shortbread once. Did you know you can make fudge from Pinto Beans?? Very good too. Skin issue tho just like hummus.😉
