Frying the brinjals
2 Brinjals / Eggplant (cut into wedges)
Salt to taste
1 tsp turmeric powder
1 tsp chilli powder
Oil for frying
2 tbs oil
1 tsp cumin seeds
1 onion
2 tomatoes (cut into small pieces)
1 tsp turmeric
1 tsp chilli powder
Method:
Cut the brinjals / eggplant into wedges then season it with salt add in the turmeric powder, chilli powder mix it all together until all the brinjals are well coated. Heat the pan with some oil when oil is hot, add the brinjals / eggplant and fry until they are golden. Then remove from the pan and keep it aside.
Then in another pan pour the same fried oil add in cumin seed then add in the onions stir add in the tomatoes and the salt. Add in the turmeric and chilli powder, mix it well and cook until the tomatoes are soft then add in the fried brinjals and stir until all the brinjals are well coated with the masala. Turn off the heat and serve this as a side dish with rice and lentil curry so YUMMY!!!
