Ingredients
2 eggs
1 whole lemon zest
1 teaspoon vanilla essence
2.5 cups flour
1 tablespoon baking powder
12 tablespoons white sugar
1/2 cup softened butter at room temperature
4 tablespoons apricot jam
4 tablespoons lemon curd
Instructions
Preheat oven to 180c.
In a small bowl, combine dry ingredients; flour and baking powder.
In a large bowl, whisk together eggs, lemon zest, vanilla and white sugar very well.
Add the dry ingredient mixture gradually and mix well.
Add butter and knead with your hands until the dough comes together. And cut a quarter of the dough to refresh.
Wrap in plastic and refrigerate the quarter dough for 1 hour.
Grease a tart pan with baking spay.
Remove dough from fridge
Roll and press down a non-refrigerated dough onto the bottom of a greased tart pan.
Prick the dough with a fork.
Spread with jam on top and the lemon curd
Crumble the frozen dough over the jam and curd using a grader.
Bake for about 30 minutes or until golden brown.
Cool completely in pan
Cut into pieces, and serve.
