Tamales, more popularly known as "BOBOTU" to us Kapampangans, is a savory kakanin usually served for breakfast or merienda.
The traditional way of preparing this dish would require soaking uncooked rice overnight, then grinding the same into a fine dough which we call "galapong" -- quite a tedious process! The quality of rice can also sometimes change depending on the harvest, and this affects the consistent outcome of the product. Mrs. Galang took that tricky part out and used rice flour for this version instead.
