This easy Lemon Chicken Piccata Recipe is one of our ABSOLUTE FAVORITE things to eat for supper. And it's so easy! I use one pan and one pot for everything. This recipe does call for capers, but if you can't find capers or you're just skeptical about them, you don't have to use them. I do recommend them, though. They make this dish extra special.
Here's how to make it.
INGREDIENTS
For the chicken:
• Boneless, skinless chicken breast, diced (I use about 1 lb for this recipe)
• 1/2 cup flour
• 1/4 tsp. salt (+ more to taste when done)
• 2 Tbsp. olive oil (+ more if needed)
For the sauce:
• 1 tsp. minced garlic
• 1 cup chicken broth (I use chicken stock base + water)
• 1/4 cup lemon juice
• 3 Tbsp. butter
• 2 Tbsp. capers, drained
Also you'll need a box of your favorite pasta (I use angel hair) and a jar of your favorite pasta sauce. (I like Bertolli Garlic & Olive Oil.)
You also might need a little bit more olive oil to ensure your chicken is all cooked through, as well as some salt to taste for the chicken.
INSTRUCTIONS
1. Preheat oven to 180º F (or no more than 200º F) to keep chicken warm once it's cooked.
2. Mix 1/2 cup flour and 1/4 cup salt then lightly dust diced chicken.
3. Heat 2 Tbsp. olive oil in skillet and cook chicken until done. Don't crowd the pan. Cook in batches and keep cooked chicken warm in oven.
4. Once chicken is done, use same pan on low or medium low to heat garlic until fragrant. (Note: If pan has a bunch of oil in it when you're done cooking chicken, blot some out with paper towels. If the bottom of the pan has too much flour stuck to the bottom so that the whole bottom of the pan is brown, you might actually need to clean the pan a bit before adding a bit more oil. Too much of anything is going to make a less-than-pleasant sauce.)
5. As soon as garlic is fragrant, add 1 cup chicken broth and continue to stir, breaking up bits of flour at bottom of pan. Continue cooking until it begins to thicken. Once thickened, add lemon juice. Stir and continue heating. Just before you're ready to serve, add butter to melt and and add in capers and heat through.
6. Heat up pasta sauce in a separate bowl.
7. Once pasta is cooked, assemble everything and serve. Pasta with pasta sauce. Chicken beside it with lemon caper sauce.

I love fresh lemons too but I have to admit I don’t always plan suppers far enough in advance to have them on hand! I always have bottled lemon juice though. 😄 Thank you for watching and for taking the time to comment!

This is the perfect video! Your voice is so peaceful! I'd cover the pasta with the chicken and lemon sauce and leave off the other. Yummy

That's such a kind thing to say! Thank you very much! You certainly could leave off the tomato sauce from the pasta. I just love how all of these distinct flavors meld together and complement each other so well and this is how I first learned to enjoy this dish. 😋 The best part about cooking is we can all find the way that is perfect for our families! And with this dish, since the sauces are served separate, you can always leave it up to each person if they want both sauces or just one! @@appalachiannana7975 They are kind of tart. Some say they have a flavor that reminds them of green olives, but to me, they just have a sort of lemony flavor. I don't get an olive taste at all. They aren't at all like peas, even though they look like them. They aren't sweet at all. They're just salty because they're kept in a brine. It's definitely for savory cooking. They aren't something you'd eat on their own, in fact if you tried one by itself, it'd probably be so strong you'd want to spit it out! But they give a wonderful flavor to this sauce and it's a traditional thing to use in this. I've only ever used them for chicken piccata, so if I get a jar, it's sort of like getting a jar of pimientos for pimiento salad. You don't use them all at once so they just live in your fridge until you're ready to use them again. 😁

That looks great My question is why did you put oil in the pasta water? I was always taught never ever do that because the sauce won't stick to the pasta

I got in the habit of doing this ages ago to keep my pot from boiling over. I never use a huge pot for boiling pasta because I just have limited space on my stove at any given time. I’ve read all the articles saying not to do it but I do it anyway. I’ve never had a problem with sauce sticking to my pasta. 😁
