Made this tonight. I didn’t have a leek so I just threw a whole onion in there, and used chorizo instead of Italian sausage. They didn’t hold together in balls, but the flavor is still great. I also added in some red pepper flakes for more heat. The stew is so rich, hearty, and savory with such simple ingredients. To me, THIS is what French cuisine is all about.

I cooked this using Calabrese sausage my local market makes and the stew was a home run. I added kale to the stew in the last 10 minutes of cooking because I had some. Very delicious and will definitely be making this again.

I came up with some kind of lentil and sausage with rice or barley stew/pilaf sort of dish years ago when I just wanted to use up a bunch of ingredients that were going to go bad if not used immediately. I just throw in whatever else is on hand like carrots, green beans, spinach, mushrooms, tomatoes, sweet potato... anyway you get the point. The star is the sausage and lentil, somehow I blindly stumbled upon this great combo and have enjoyed many variations of this kind of stew over the years. Not many people where I live eat lentils so they are always surprised how good this dish is when I make it for them.

Lentils are one of the best easy meals to make. They are delicious and nutritious, and cook quickly. A good lentil soup is satisfying even without any meat in it, but even better with, of course.

Very nice, I do a similar one with Speck taking the place of the sausage and adding red wine as part of my cooking liquid. Celery is added and regular onion takes the place of leek. Thank you chef.

Love your simple recipes. I'll be cooking this soon. For someone new to cooking with leeks, you'll want to trim off the very dark green stalk and discard or compost it, and then halve the rest of the leek lengthwise most of the way to the root. Splay the leaves apart and rinse very thoroughly before slicing. Leeks almost always trap dirt and sand between the leaves as they grow and you'll be very sad if you end up with a gritty stew!

This is quite similar to a dish I ate in Lyon with a nice quality sausage on top of lentils. I assume this dish is one Jacques brought from back when he was a kid but I’d be curious what he’d say since they’re ‘traditionally’ with Lentilles vertes du Puy :)

Good job. What I'd do is Oil. Cumin, black mustard seeds, let them crackle. Add some onions tomatoes, turmeric, chilly powder, coriander powder, garlic, and cook till it softens. Then add the sausages, lentils, salt, water, and some garam masala optionally. Cook for 30-40 mins covered or for 3 whistles in a pressure cooker. Serve. I'm Indian. We're experts in lentils.

For ease of time and preparation, make a batch of potato/leek soup at the same time. Either one is better the next day, and you can add to the potato/leek soup. ie ham, bacon, cheese, veggies.
