I watched your video on how to make flour tortillas. Since it was older I could not leave a comment on that video. When I was a teenager a Mexican family lived next door to us. And the mother of the family would bring over warm flour tortillas, and OMG those were soooo good. I loved her. And I have wanted to make those every since. I am now 56 years old this was a very long time ago. And I am so grateful you had this online and I stumbled across it. THANKS SO MUCH

Okay ima but to get a little personal. But my mom didn't really teach me how to cook. So I had to use youtube to learn. And your the only person I watch for recipies. I love how your food comes out. My boyfriend loves how it comes out. Honestly your the mom that tought me how to cook. Ima try the recipe today. I tried your birria in a instapot and the oil omg I still make it and use it on alot of things like hievos rancheos or when I make eggs or tortillas I use I little of the oil. But omg. I'm in Texas and quite a number of years ago when I went to California to visit friends I had fun nose pressed up against the window everyday waiting on the corn guy to come down the street LOL the street corn was so amazingly good. I've made it a few times at home, but I usually use queso fresco instead of the Cotija. But I'll take your word for it that the Cotija Mellows out in this. I agree with some others that the green chilies would be amazing in that. And whenever I have corn I've got to have cilantro so that would be a must. I can totally see where the Tajin would be amazing on it. I love Tajin on just about anything. I have got to try this it just looks amazing

@@Viewsontheroad We all make dishes and bring them over one of our houses, whoever is hosting that year. Mom, will come over and cook the turkey. I cooked the turkey twice and brined it with ice water, lemon, salt, oranges and cranberry juice (inspired by Alton Brown on Good Eats). It was so good, but Da Fam likes it the traditional way that Mommy makes it. Lol. I usually do a creamy veggie casserole and pasta salad. I am kind of new to your channel, so I've been binge watching to see what I want to make. All of your dishes look so good😍😋. I will decide by the end of the week, though. Lol

That brand of pasta is the best that I found as well. I just made a pan of vegetable lasagna and the flavor of the pasta makes me not miss the meat. Your idea for this corn dish is phenomenal. I'd like to try it without the pasta. Roasting the corn makes all the difference thank you so much for this recipe

Once in awhile, my husband and I just make street corn by itself for dinner. We like it with mayo, crumbled queso fresco, fresh squeezed lime juice, salt and pepper. And hot sauce of course. But this looks delicious! No way I'm making an entire pan of it with just us though. I'll save it for a family get together, bc it's too rich and fattening for us to eat a whole pan and we WOULD! LOL

I made this tonight and it was absolutely delicious! I thought it would turn out salty due to all the cheese but it was not! You really don't need to add any meat to this but if you do it should be a light spread of shredded chicken breast meat or shrimp. I would also try adding some spicy green chilies just to give it a lil more flavor next time i make this. This was a great fusion dish that will go in rotation at my house. My boys destroyed it lol I used fresh corn right off the cob and the Tajin was absolutely necessary at the end also its sooooo delicious with the Flaming hot cheetos. I also made beef taquitos to go with this meal and it was perfect! Thanks for your amazing recipes Steph! I will do my best to try them all lol much love from Cali!

That looks delishous, love all the ingredients you used never would have thought to make it like that. You can't go wrong, I love Mexican corn, creamy sauces, lasagna 😋 also in the summer we have leftover over corn on the cob after a party so this will be great to use up leftovers. Keep inventing new things. Some of my simplest recipe inventions are family favorites.
