hate to break it to you Glen but this is not Mexican food. this is as Mexican as "spicy mayo" is Japanese. this style of cooking is distinctly from the US. i am not here to denigrate it, but i figured you may want to know your understanding is a bit off.

This recipe is amazing! My family devoured it before I could take a picture. My little one (13 yrs old) is foodie like her mama and rates meals on a thumbs up system, 4 or more is “good” and she gave a “40 million thumbs” for this recipe!! And a happy dance!! Lol. I have been wanting to make this since the day you posted it. I probably have played this video 30 times because it looked so amazing. Been asking my husband (since he's so picky) if he'd eat it and never got a straight answer. Today I decided IM doing this. I took some short cuts and made it comfortable for my home. For the filling I shredded and cut up the leftover roast carrots and potatoes I made my family last night. I used Colby cheese flin the sauce since thats what I had on hand. I surprised my 10 year old on his lunch break from school with this meal. It was so delicious he fell out of his chair in shock! Since I'm keto I used low carb tortillas and made mine without the potatoes! Thanks so much for this amazing recipe 🤗

Awesome. I can still remember presenting my son with a stuffed pork tenderloin meal when he was in high school and in between activities/practice. He opened it up and just melted on how fine it looked. He was so appreciative that I made that instead of some greasy fast food.

I made this yesterday and omg!!!!! EVERYONE LOVED IT😍 if you’re reading this you HAVE to make it... I couldn’t find anything at the store named “hatched chiles” so I used a can of green chiles😍 tasted amazing! Also, I didn’t use potatoes because it was sold out surprisingly.

You guys are so cute, love the interaction. And who doesn't love a little Minnie Riperton?! This recipe is oh-so-good. The only thing I would do differently is to add a bit of the sauce to the inside ingredients. That is how I do my red sauce enchiladas and it is only a personal preference. Now I have to research your other recipes. Thanks for posting!

Ok, so I added cilantro and jalapeños ( because I love cilantro and jalapeños) and instead of mixed vegetables and potatoes, I used sautéed mushrooms. They're going in the oven now... can't wait!! EDIT: They were delicious! Even my VERY finicky son had seconds! 😊

You can always make some and freeze batches. It is just my husband and I, and grew up cooking for 6 or more people. Now that I am married, I buy in bulk. I cook it, freeze part of it and give away to friends that don't like cooking, or they say they don't know how to cook. I need to share the channel with them.

I made this for dinner tonight and followed the recipe almost exact and it was sooo amazing. I didn’t feel that the vegetables would taste right in this particular blend so I opted to try without them the first time around and substituted with chives. Was so good and unbelievable that I’m almost tempted to just leave them this way but I will try with the frozen veggies the next time and see how it goes. I do very highly recommend the chives though! They add a nice flavor and a fresh crisp crunch

I used to think I'd never be able to pick a favorite dish you've made. This might be it on looks alone, but it has everything I love. Hatch chilis? yes please!! I'll never forget how they smelled roasting in the markets in NM years and years ago! Now once a year they bring truckloads of them here and roast them in the grocery store parking lots. I buy a whole box and take them home and freeze them.

@@clarisamagdaleno8548 I live in Iowa so keep that in mind, but to me they seem like an Anaheim type pepper. Long and kind of thin walled compared to like a bell pepper. The secret is that these are only grown around Hatch, NM. They say the soil makes them taste differently, and I believe it. You can get them mild or hot, but the secret is the fire roasting. After they're tumbled in a cage over a flame, they put them back into a plastic bag in a big produce box (if you buy the whole thing) and you let them steam as you take them home. Once they're cool enough to handle I just lay them out on parchment paper trays and freeze. I peel mine later. The skins slip right off. LOL, I went off on a blabberfest there. The cans are good, too.

So grateful that I found you. I was born in Southern California and grew up with Mexican food and when I married, I came to England where my husband was born. I always thought we would return to California, but it just never happened 4 children later. I have missed the flavours and culture of Mexico so much. They have never heard of a corn tortilla so bought some Masa Harina and a tortilla press, but didn't know how to make ChilesRellenos. Learning from watching someone cook is actually the easiest and best way. My mother in law told me how to make country gravy when I first married (decades ago) and I messed it up. Finally I got a chance to watch her do it and it made sense. There are certain things not easily conveyed by a recipe. My daughters all learned how to cook by watching and doing it with me. Now they have all moved on to their own styles and recipes, but young people gain that confidence by actually doing it as they grow. I’m surprised people would laugh about learning by watching. There’s no better way!

Hi ladies- first time viewer here, this video was a rando on my KZbin feed. They may as well have been reading my mind- I’m all about the wet, and I have a similar, much requested dish that I’ve made for years. For lack of a better name we call it Chicken and Sour Cream Enchiladas (or Burritos). Everyone loves em. Your sauce looks delishy (hey now!) even with no crema. The heavy cream does the trick. I can’t tell you how many home cook KZbinrs have caused me to bail half way through the video. I’m happy to report I find you delightful so you have a new subscriber. Watching you add that cheese to your burritos, I started laughing cause it reminded me of when my daughter was 16, her boyfriend was coming for dinner & she made chicken enchiladas for the first time, she added 4lbs of a Mexican cheese blend, I told her “Are you crazy, you should only use 1 bag or less”, she said “I didn’t know”.. Girl!! Those enchiladas with 4lbs of cheese were soo good!! 🐽🐽🐷🐷

I've made this recipe twice and I loved it . the first time I made it just the way you instructed but the second time I put the rolled filled tortillas in the oven with a little cook spray by themselves and toasted them a little bit. And then I added everything else and cooked it for 20 minutes it gave it an even better texture. Thanks I love it

I love how you added ‘frozen veggies on hand’...cuz in most households those are the veggies sitting in the back of their freezer. EVEN if ppl only have store bought tortillas, this would be a perfect quick supper.

We calll them smothered burritos in New Mexico. I’ve never heard the term wet burrito but it looks absolutely delicious 😋 I am definitely trying out this recipe

Wet burritos are popular out here in California. It is usually with a red sauce and cheese on top. This recipe looks amazing with all that cheese.

I made these burritos today, and let me tell you...they were delicious! I didn't have enough heavy whipping cream, so I added evaporated milk (as suggested). I also used Colby cheese, sharp cheddar cheese, and mozzarella and it all blended nicely. The veggies I can do with or without. Lastly, I roasted 3 Anaheim chiles and 1 Poblano Chile instead of using canned chiles. Either way, this dish was a big success in my house. Thank you, Steph for sharing it.

Your comment was a year ago Matthew but I thought the same. I made it today and instead of frozen mixed veggies I added cooked corn cut from the cob, sliced mushrooms and roasted capsicum and it was awesome. Well worth trying.

I made this tonight for the 2nd time in 2 weeks (we had Steph's birria in between) and it has quickly become a crowd favorite. Tonight I added a shot of MOJO marinade & about a cup of blended Frontera tomatillo salsa to the cheese sauce and it gave it such a nice little kick. Love the Views recipes!!

Also, flour Tortillas should be fried after filling, then add sauce and bake or the tortillas get soggy and its like mush in your mouth. Other than everything else I said it would be delicious....lol i'm not trying to be mean but from trying both ways, I know

I'm usually a silent viewer, but WOW. That looked fantastic. I'm an old woman and I mainly eat meat. Who would have thought frozen veggies in a wet burrito. Even I could eat them. Love your way of teaching us both about your culture and the food. I grew up in southern California and have always loved Mexican food. Here in Ohio it was hard to find. We now have authentic Mexican restaurants in our area. I love them.❤️🙏❤️😃

Sometimes I put frozen burritos in the oven. Maybe some butter on them or put them on a plate and put cheese on top. Maybe some olives and sour cream.

Liked the recipe until the veggies. For me I would add beans either black or pinto or even refried. But your burritos looked fantastic.

I also passed on the frozen veggies. I subbed black beans, corn, bell peppers, diced tomatoes and a small can of sliced olives. Came out delicious!

Yeah I would of done chunks of green pepper onion and tomato maybe, maybe a black bean but the potatoes and mix veg threw me off..still going to try it though. I'll just twerk it to my liking a little

In this pandemic I am running out of what to cook for my family who liked your white sauce, so I took out this tamales stuffing in my freezer & I used it plus some turkey from the holidays. Rolled all the stuffing into some corn tortillas. Followed your recipe but with a twist and it turn out well, thank you.

I make smothered chicken burritos just a bit differently. In the filling I add chicken, shredded cheese, the cooked onion & garlic, sliced black olives, and canned diced green chilies or jalapeños. Spices I add are salt & pepper, oregano, red pepper flakes and a tiny bit of cumin. My sauce is just thickened green enchilada sauce. Then sprinkle cheese on top before I bake.
