Just made this for dinner without coconut milk BUT WILL DEFINITELY BE TRYING IT WITH IT! my daughter even ate the chicken and asked for more because it was so good! My kid never eats meat so saying she wanted MORE is saying a lot about this meal . I also didn't have a cast iron. I just transfered everything into a baking dish and put the chicken on top and covered with tin foil and pretty sure it came out just as good.

Made this tonight. I had everything on hand except jasmine rice so I used basmati rice. I was scared that it wouldn’t turn out right but it cooked perfectly! I also decided last minute to go ahead and use the coconut milk I wasn’t going to because my son can be picky but I said to myself “I always cook what he likes, tonight it’s about me!” Lol .. I’m so glad I did because it taste so good and my son loved the rice!
