I love making these almost as much as I love eating them. Sometimes I use cinnamon sugar which is amazing. Another one is sandwiching jam and whipped cream i between two biscuits. Absolutely sublime

I love your personality. I first tried Palmiers at San Francisco Airport, my flight from my home (New Zealand) was delayed by nine hours so I arrived at night time and the only thing open in the airport was a little stand selling pastries. I've wanted to make them ever since but I don't know where time has gone. Tomorrow is the day for making these. The fold is called a book fold by the way. This is what we call "blitz puff pastry" really easier and faster than standard puff pastry. I think, If I remember correctly, we used a food processer, but a few seconds too long and you end up with a pie shell instead of puff pastry, so your process makes it more likely to turn out well. Thanks for the video. Have you tried the method that is used to make "cruffins"? It uses melted butter and you make each "cruffin" individually.

Are any of you fellow bakers having trouble with butter these days. At room temperature, some butters will not cream with sugar. Lumps remain behind after many minutes of mixing. Apparently cows are being fed a new diet to maximize milk production but it has changed the quality and properties of butter. Off topic I know. Thank you for another great recipe.

I used to eat them as a child, they weren't as crunchy though and doubled up with jam and cream in between them. They were so good. I'm going to try make them again so my kids can have them as well. I called them butterfly cakes though as a child. Took me ages to find these lol.

Bit too much just for myself and offspring so I wrap individually in cling film and freeze when they've been shaped. I then bake however much i want from frozen as normal. Perfect results every time.
