So glad to have found this, I had a short stay with some folks, who I suppose may have been Peruvian, but I am unsure. Anyway, it was only one night if I recall, and they fed me this dish, and me, being a confused lil white teen, had NO idea what it was. I had become convinced I had made it up in my head, but finally I can tell this is exactly what it had to have been The sauce was so good, and took me by surprise considering how picky of an eater I am.

Fricken Love this sauce. Im peruvian. My family does it with jalapeno. Sometimes some serano. Sometimes cottage cheese. Overall generally the same. ❤❤❤

YOU CAN HAVE DOUBLE NATIONALITY SINCE THE REQUIREMENT IS THAT AT LEAST ONE OF YOUR PARENTS ARE FROM PERU. EACH COUNTRY HAS ITS PROS AND CONS SO WHY NOT ENJOY BOTH NATIONALITIES.

Hi! Yes any brand will work such as Cacique or I used Caribe, just make sure the sauce is smooth and cant feel the tiny pieces of cheese (:

HEARD THEY ADDED IT FOR THE THICKNESS. DUE TO THE SOIL MANY PLANTS CHANGE FLAVOR OR CONSISTENSY. IT USED TO BE THAT OUR GRANDMAS DID NOT NEED THE CRACKERS IN THEIR DAYS. NO PROBLEM WITH CONSISTENCY

I'm probably not spelling this correctly but I had a home cooked meal in Lima, Peru which contained chicken, pepper, bread, maybe rice, and boiled egg. I thought it was called Ahi de Gallina but the word Gallina may be what you said and spelled instead since I'm not very good with Spanish. Are they the same or similar? I would love to enjoy that meal again. Can you do the recipe I'm describing? I would appreciate it very much! I loved Peruvian food but decided to pass on the cuy. LOL!

Hi Tammy! So i have the Aji de Gallina recipe on my channel. I posted it about a week ago! Everything is pretty straight forward. I would go to a latin store in your area & look for the yellow Peruvian peppers to make that recipe. haha yeah the cuy could be a shock for some people :p Also, papa la huancaina is different from aji de gallina as it is cheese based...but that just says how good this is too! Let me know if you try them (:

And I did spell it correctly!! ☺ As good luck would have it, I received my Peruvian snack care pack today consisting of regular and chile picante flavor Inka Corn as well as habas. Yummy!! 😋 My friend sends them to me every year from Lima ever since I visited in 2012. Best vacation ever!! I rarely cook but I will let you know if/when I try your recipe. You do a great job explaining how to cook these delightful dishes. I tried to get the recipe from my friend's maid but much got lost in translation since she spoke no English and I very little Spanish. LOL! Anyway, great video! Thanks again for shari g. 😀😀

TALKING ABOUT THE SKIN OF THE FROZEN PEPPERS, SOME PEOPLE FIND IT EASIER TO FIRST, PEEL THOSE FROZEN PEPPERS, SINCE THE SKIN COMES OFF EASILY. THEN YOU CHOP THESE PEPPERS. BY THE WAY, DID YOU DO A VIDEO ON "AJI DE GALLINA"?

El orginal no es con crackers, es solo con queso. En Lima, mi mama hacia aumentar la salsa con galletas porque como eramos muchos no habia suficiente dinero para comprar tanto queso, es decir hacia una huancaina adulterada x razones economicas.

That huancayna es too poor, needs some garlic and onion cut in Julianas, first fry with the ají when is medium gold fried put to the blender and you are going to need saltines. This is very bad recipe.
