On the contrary aji amarillo is meant to be sweet and warm. Peruvian peppers don't mean the same as mexican peppers. In Peru peppers are meant to be flavorful and tasty rather than fully spicy and hot. Peppers' heat is not bad but in Peru heat is not what makes a pepper great.

I have grown "aji amarillos" from a plant bought here in Australia, but they are a much smaller and yellower pepper. Are there different types of aji amarillo? Are they likely to taste similar? (I can't find the larger orange ones shown in the video). Yo tengo aji amarillos pero son mas pequenos. ¿Hay diferentes tipos de aji amarillo? ¿Con el mismo sabor? No puedo encontrar los mas grandes del video en Australia.

if you grow your plant from the original Ajies Amarillos, it should taste the same. I had a couple of friends in Melbourne that had a Aji amarillo plant and they also grown ajies but smaller, nonetheless, the taste was almost the same.

Does the peppers have to be a certain kind? We don't have those kind of yellow peppers at Walmart. We do have yellow bell peppers but I don't know what you are using. Thanks.

they are called Aji Amarillo peppers which are from Peru. He boils them w milk to take out some spiciness

Not much spicy, they are more on the sweet and warm side. As ingredient the aji amarillo sauce is key in the peruvian cuisine.

Thats a trick to take all the spicyness of the peppers so they maintain the flavor but without the heat

Not in peruvian cuisine. Peruvian peppers are more on the sweet and warm side when used for peruvian cuisine. If you are looking for very spicy food you can try mexican cuisine.Plenty of heat there. The place peppers have in mexican and peruvian cuisine are completely opposite to each other.

This is the base puree for the sauce you love and many other traditional Peruvian dishes. You will need to use this paste as an ingredient to make additional sauces. If you can't purchase it, this is the real deal made from scratch. The version you're looking for has mayo and parmesan added.... with a few other things. Mustard too! That profile is typical of a roasted polleria joint
