This tutorial, will show you how to make an easy Plum Cake (Fruit Cake) with out soaking. This recipe gives you a moist and delicious plum cake loaded with dry fruits and nuts.
Ingredients:
* All Purpose Flour - 250 gram / 2 Cups
* Cocoa Powder - 2 tsp
* Salt - 1 pinch
* Soft Butter - 250 gram / 1 Cup + 2 tbsp(Room Temperature)
* Brown Sugar - 200 gram / 1 Cup
* Large Eggs - 4
* Baking Powder - 1tsp + 3/4 tsp
* Lemon + Orange Rind - 1 tsp
* All spices - 2.5 tsp (Cinnamon 1 tsp, Nutmeg 1/2 tsp, Dry Ginger 1/2 tsp, Cloves 1/4 tsp, Cardamom 1/4 tsp) powders
Dry Fruits - 600 gram (any dry fruit of your choice)
Cashew Nuts+Pecans - 200 gram / 1.5Cups
Golden Raisins - 100 gram / 1/2 Cup + 2 tbsp
Black Raisins - 100 gram / 3/4 Cup
Cranberries - 100 gram / 1/2 Cup + 2 tbsp
Dates + Fig - 100 gram/ 3/4 Cup (chopped))
To Decorate - Cherries and Pecans
Points to remember:
* You don't need to overbeat the batter, mix enough to combine all ingredients well.
* Butter must be soft and squishy
* Don't overbake
* After baking, keep the cake overnight wrapped with cling or foil to develop the texture and taste.
* Immediate cutting will make the cake crumply and dry.
* Fruits or nuts can be used what is locally available.
