The last dish reminds me pf what we call here "telur sambalado" or "spicy-sauce eggs" where we use "sambal" or "rough chilli paste" made by shallots, garlics, and lots of fresh chillis and other spices blended or better pound with mortar and pestle, then the paste is sauteed in oil and then the hard boiled egg is put in the paste... i remind this because Eva loves spicy food

Apart from breakfast, eggs find a lot of space in Italian cuisine. One of the differences between Americans and us Italians is that all this that we saw in this video, Americans would very happily eat it for breakfast.

My mother was from Calabria. During summertime when we were kids and had lots of time in the swimming pool she would bake her cheese sandwiches: Agnes Latino’s cheese sandwiches by poolside: Chopped hardboiled eggs…(5-8) Grated cheddar cheese (lots) maybe 2 lbs Minced rehydrated onions (not fresh she said too oniony) 2 tbsp Tomato paste 1 can small Chopped black olives Minced green bell pepper (cut very small) Dried basil Small fresh bread rolls cut in half, then mixture of the above added in bread rolls and baked wrapped individually in tin foil. …oh so good! then jump back in the pool. Sounds weird but delicious.

Not about eggs, but about Italian breakfasts. I've visited Italy several times and decided I really like their ideas about breakfast - a little coffee (it's before noon, so cappuccino is OK) and a pastry. Start the day on the light side, with a sugar and caffeine boost!

I think this also depends on the fact that dinner is usually later than in the US or Britain: on average around 8/8:30 PM, so there's less of a need to fill up after the night.

Eva mi hai sbloccato un ricordo, la mia nonna faceva spesso le uva in funghetto, ed erano buonissime... se non ricordo male faceva tutto come te, ma alla fine oltre ad aggiungere il prezzemolo, sopra le uova dopo averle cosparse di salsa di pomodoro dava una spolverata di grana, che chiudendo il coperchio col semplice calore anche a fuoco spento si ammorbidiva. buonissime, grazie per avermi fatto ricordare il tutto

In our Greek cuisine we have a very similar dish like the first one. There are two ways to make them, the first one you scramble the eggs in the tomato sauce along with some pieces of feta so that it melts all together. Or like Eva did you crack the egg and let it cook in the tomato sauce. Let's not forget the crusty bread.

Fridays during lent we usually eat eggs in sauce. My mother in law from Calabria introduced me to them. We cook the eggs until hard and enjoy with some great bread. One of my favorite.

But I believe that everything we saw in this video, many Americans would gladly eat them for breakfast. Most dishes that include eggs, Americans generally eat them for breakfast. While we Italians eat these things during lunch or dinner.

My Sephardic grandma taught me to make ovos con tomat. Stewed tomatoes, s and p, poach eggs, put feta and black olives, cover, cook, eat. One day I changed it, instead of feta and olives I put a good quality French brie on the eggs. Everyone goes crazy for this. Of course both with lots of bread. Delicious 😊

Since I love "well done" omlettes (and almost NOTHING else that's "eggy"), I just LOVE the concept of Uova in Trippa alla Romana -- and it looks so EASY! Especially for Lent, this recipe makes it MUCH easier to observe on Fridays.

in MIlan we call them busecca matta (in dialect "busecca" means trippa "matta" means crazy but also fake). Except it isn't much of a lent dish because we add pancetta too. (And except that most Italians don't care about lent at all.)

It would be an interesting idea for an informative video. Italian breakfast is usually light and sweet. Obviously it depends from house to house but the big classics are coffee with or without milk with biscuits or a pastry for adults. Fette biscottate (I think they are known as "rusk" in the USA) spread with jam are another common substitute for biscuits, or should I say we're, because nowadays they seem to have become a little old fashioned. For kids, cereals with milk have been becoming more common.

I have been vegan for the past five years. The two things I miss? Eggs and cheese. I loved hard boiled eggs, particularly deviled eggs, and very, very, sharp cheese. I admit I have had some excellent aged cheese a couple of times in the last few years. I'm not sure if I can eat eggs, even though I miss them, all as a stage of life of a being sort of thing. I think many Italians keep their slim and youthful appearance because they don't subscribe to the traditional English or American breakfast Most of the Italians I know make do with a cup of expresso. This basically extends the fast from the day before and burns calories and fat. As for my favorite Egg dish for Lunch or dinner a Spinach and Egg Quiche, tops my list it is also a good meal for Lent.

I'd say it's more portion size than anything else. Eggs are low in calories and they keep you full and satisfied. Now ofc that depends on how you prepare it. A poached egg(my favorite) is not the same as a fried egg

A traditional English breakfast has 800 + calories an American breakfast has about 700. Coffee without cream or sugar is essentially water. This of cause would add to the daily calorie count but It has been found that Fasting for 15 hours has a positive effect on maintaining weight and blood sugar levels. ( Epoch Times) . Weight gain may be halted to some extent because of the length of the daily fast otherwise the higher carb diet of Italy and fat intake of France would produce a population of above-average weight gain it does not. Hi from Tuscany! Also my great grandma used to make "uova in trippa" but she called it "frittata trippata" and sometimes she put on top some fresh pecorino cheese and she finished cooking the "frittata" under the grill in the oven. It was delicious ❤❤

Well, when I was a kid my grandma would often prepare for breakfast egg yolk and sugar gently cooked into a cream with either Marsala (zabaione) or coffee. So at least some Italian have eggs for breakfast!

0:13 I do not know where this is going, and I understand that my feeble attempts are just that but: in 1990 I prepared Eggs in Purgatory with fried polenta. It is a special memory to me, because I had (I thought) come up with it myself. No lie. I heard the phrase, “eggs in Purgatory”, and I guessed, at what it should be.🤗I made a somewhat chunky, spicy fresh tomato sauce, and poached the eggs within. I served it upon fried, herbed polenta, with finely grated Parmigiano Reggiano. The runny yolk pulls it all together.😋😋😋🔥

My grandmother always cooked scrambled eggs for breakfast( and soft boiled eggs for me). Maybe because they were farmers so they needed a stronger breakfast. We live in the Northern part of Italy.

I'm making this for breakfast and I'll add some country potatoes. Lots of cultures eat eggs for breakfast, and I agree with Harper that it IS the most important meal of the day. Having protein in the morning will help get you thru lunch without feeling too hungry. I would love for you all to make some Southern US foods for breakfast: cheesy grits and eggs, sausage gravy with biscuits, etc. Your Italian recipes are great, but we also love to see Eva enjoying other cultural foods. Does she like sushi or Korean food?

As a brit i love a cooked breakfast and have eggs in one form or another every morning. i now live in italy and much as i try to live the italian lifestyle i just can’t get to grips with the ubiquitous sweet pastries and biscuits which seem to be the only option here, so far i’ve failed to find any savoury italian breakfast alternative with the exception of the typical buffet style continental breakfast served in hotels which i don’t believe has much if anything to do with Italian cuisine… maybe a video on savoury breakfasts if such a thing exists.

The sweet breakfast is a relatively recent thing in Italy, but in the past (until the second half of '900) breakfast wasn't even a thing: the first meal of the day consisted usually of left-overs of the dinner; milk was used only where it was immediately near at hand, i.e. in farms where cows were bred, that usually were in the north of Italy; there could be also a distribution of milk every morning in the cities near such farms for the very few who could afford the service. In any case, milk was for children, not for adults. Coffee was a luxury product and was served just in wealthy families at the end of every lunch, in middle-class families only at the end of special lunches (for holidays or anniversaries or ceremonies) or for visiting guests of special importance. Cookies were for dessert at the end of festive meals or for said guests in the afternoon. Not for breakfast: even when milk was used for breakfast, it was bread that went in it, and just the wealthy put some butter and/or jam on it. Until the 60s Italy was a very poor and mostly rural country, and most of the people worked in agriculture, where you had to get up VERY early and your "breakfast" came when the mothers of family, after tending to the beasts in the farm and to the very elderly and the very young in the house, brought the first meal of the day to the men (and sometimes the younger women) in the fields, after several hours of work; so you couldn't content yourself with milk and bread, you needed something more filling: bread and wine and cheese, the left-overs of the dinner (soup or pasta, depending on if in the north or in the south), for the more lucky salame and prosciutto, maybe some fruits, if in season. The "italian breakfast" is something born from the industrialisation of the country in the '60s, when also the agriculture became industrial and several food industries were born, or ancient almost artisanal food factories expanded and modernised. Milk began being produced in much more quantity, and the new fridges and refrigerated trucks could maintain it fresh for longer, so it could be transported in every city and conserved at home; and the better quality of life and economic possibilities of a large part of the population could afford to buy a lot of fridges and milk it in larger quantities. Biscuits were produced industrially, coffee was imported in larger quantity thanks to the money of the Marshall Plan and the commercial deals with South-America. Most of the population wasn't working in agriculture anymore, but in offices, factories, services; the working hours were different, so many could afford to have breakfast at home, or to pay for it in the bars, because a lot of people left the countryside and went to live in the cities. The sweet breakfast with coffee and milk and cookies and croissant was a luxury that everyone could afford, at last, and that everyone did afford, almost as a reaction to the poverty of the past.

My father’s family made a baked macaroni with salami, peas and hardboiled eggs. I love it. I’m making a quick marinara and we have prosciutto so I threw some in. I made some almost hard boiled eggs this morning. I just had this urge to throw them in the sauce. Must be in my blood because I didn’t know people put eggs in the sauce all the time. I thought it just went in my family’s baked macaroni dish.

Two soft-boiled eggs, peeled and put into a glas, maybe a bit of butter, definitely some salt, if you have them some finely cut parsley or other fresh herbs, then spoon out the eggs and eat with any kind of bread, whatever is your favourite. Could eat that every day for breakfast. Or as a snack. Or late dinner. Will try all of the dishes Eva made. And then I'll follow some recommendations from the comments.

That Uova in Trippa looks tasty. A bit like Moroccan Shaksuka or Huevos Rancheros. It is interesting and amazing how different cultures around the world came up with similar recipes with nuances giving it the specific cultural taste.

Very slowly add scrambled eggs to a pot of sugo. Just a slight amount at a time, so it cooks immediately. Definitely do not pour all of the eggs in at once. Eat with Italian bread! Delicious!!!

I'm not one to eat breakfast as I don't typically get hungry until around noon but I love eggs. They are one of, if not my favorite single ingredient. If you've never tried them, Cantonese style scrambled eggs are amazing. They have a unique flavor and a much silkier texture than American style scrambled eggs.

I seldom eat eggs before noon anymore unless they are boiled and in salad.. that was my breakfast yesterday! Salad with boiled eggs. Today 😂 I had Baked Beans 🫘 and Italian Bread for breakfast. I'm spanish, eggs for breakfast is not really a thing for us either. I don't even know whether we have much of a breakfast tradition really, pan con tomate, a bocadillo perhaps, but for the most part breakfast will be sweet, a coffee with something quick or we may even skip it all together (I can't speak for everyone, but I'd say is quite generalised). But honestly, regardless, I've come to appreciate eggs for breakfast, or hearty savoury breakfasts from other cultures. Starting your day with eggs, good protein in general and veggies like this would probably be the way to go for health as well. I'm sorry Eva, but I might make this deficious meal for breakfast ❤😅

I happen to love eggs in every form: heat a can of chili to a slow boil; drop one or two eggs into the hot chili, and stir them in. They cook within a minute or two. If you are reduced to eating ramen noodles: cook the noodles as directed, drain them, season them, and finally, drop in a couple of eggs and a little salt. You have turned a dish that is otherwise devoid of any nutrition into a delicious dish high in protein.

I cook my ramen with some frozen veggies, mix the broth as directed, then add an egg directly to the broth and continue cooking it and spooning broth over the top until just shy of soft boiled. I used the same preparation to make the egg from the zuppa video! Delicious and creamy

I love eggs for breakfast (scrambled or omelet or eggs Benedict), but often have pancakes, French toast, waffles, cereal (Frosted Mini-Wheats, Crunch Berries, and even the much maligned Grape-Nuts), oatmeal w/ milk & brown sugar, chocolate cream of wheat/farina (CoCo Wheats), biscuits & gravy, chicken fried steak (which usually comes w/ eggs and hash browns), toast or English muffin w/ jelly/jam or peanut butter or cinnamon sugar, Chocolate Fudge Pop Tarts, breakfast sandwiches/burritos (that do usually have egg, though), cinnamon or sticky buns...or various other pastries/coffee cakes/muffins, or sometimes just a yogurt.

True enough; as a general rule, Italians do not have savoury breakfast, eggs included. Except for one traditional breakfast item; Soft boiled eggs, which in Sicily is called, "ovu cirusu" (waxy egg).

Have you guys checked out Rosie Maio’s channel? She records what her Nonna who lives in Calabria cooks when she visits.. It’s so interesting and I wish I knew more about the different regions because I was interested in knowing if that was a Calabria way of cooking or just that specific family. They seem To live next to all their favorite shops and so they get fresh seafood and pastries every day. Is that typical to live so close to everything? So jealous

Omg! Please try grilled whole eggs! They are like hard boiled eggs, but like if hard boiled eggs were the American version, and the whole grilled ones were the Italian version 😂 (Not knocking hard boiled eggs, I could eat them every day of the week! But grilled is OUTSTANDING 😋)

yes, i love tripe too and it is very difficult to find. I am in the UK - where are you? it is much more available in France, Italy and Spain. They all make wonderful tripe recipes in these countries, In Florence they have stalls which sell tripe sandwiches and they are delicious.
