This looked so yummy . I tried it at home and it tasted wonderful. Ate it with herb rice and it was delicious. However, adding salt to rice, scrambles and sauce made it very salty for us. So that's a learning for me. I think it will taste very nice with roti/ paratha also. Looking at the high calorie ( my guess) it is worth trying on special occasions.

You can substitute common indian spices such as curry leaves (instead of their basil) n cumin instead of their oregano. Do it very mildly. I did the same for an Italian sun-dried tomatoes (I used these two, n also substituted bay leaves instead of their laurel if I'm right.) The key is to think/imagine which will be mild n go with the dish without landing it like another desi feeling dish. Cheers
